Introducing today’s star: ‘Jinggeo’ shrimp! These are known for their rich flavor, comparable to lobster, making them perfect for grilling in the rice cooker on a rainy day. If your shrimp are frozen, make sure to thaw them completely in cool water before you begin. Proper thawing ensures the shrimp remain juicy and flavorful.

Now, let’s start preparing the shrimp. First, trim all the legs. Using sharp kitchen scissors, carefully cut off all the legs. This step makes the shrimp much easier and more pleasant to eat. Next, remove the hard, helmet-like shell covering the head. Gently pull it off.

After removing the head shell, you’ll notice transparent gills on the sides of the shrimp’s body. These should also be removed cleanly. Taking out the gills ensures a pure, clean shrimp flavor. Finally, use your small scissors to trim off the eyes and the mouthparts of the shrimp.
