Step 1
First, prepare all the ingredients for the steamed pork belly. Have your fresh pork belly, onion, and ginger ready.
Step 2
Peel the onion and slice it into thick strips. Wash the ginger, peel it, and slice it into thin pieces. These sliced aromatics will effectively help remove any pork odor.
Step 3
In a pot with high sides, add 400ml of water and 2 tablespoons of soju. Soju helps to remove the characteristic pork smell and tenderizes the meat. Place a steaming rack inside the pot, and generously lay the thickly sliced onion on top of the rack. The onion acts as a barrier to prevent the pork from burning or sticking, and it imparts a subtle sweetness and aroma.
Step 4
Arrange the pork belly on top of the onion layer in the steamer. If your pork belly has skin, place it with the skin side facing upwards. This helps the skin become wonderfully soft and chewy, adding to the deliciousness. If there’s no skin, you can place it in any direction.
Step 5
Scatter the sliced ginger pieces evenly over the pork belly. Ginger’s pungent aroma is excellent for eliminating pork odors and deepening the overall flavor.

Securely cover the pot with a lid. Set the heat to medium-low and let it steam for about 45 minutes. The key to keeping the pork belly moist and tender is to avoid opening the lid during cooking.

After 45 minutes, lift the lid to reveal your perfectly steamed onion pork belly. It will be incredibly moist and tender, almost as if it were boiled but with a superior texture. The juices from the pork, combined with the flavors of the onion and ginger, create a wonderful aroma.
