Stumbling upon some large, plump domestic pork ribs at the supermarket, I was reminded of my daughter’s recent craving, and thus, decided on braised pork ribs as tonight’s main course. Utilizing a pressure cooker not only saves time but also infuses the meat with deep, rich flavors, resulting in incredibly tender and delicious braised pork ribs with minimal effort. This dish is perfect for making any meal feel special, not just for holidays.
Main Ingredients- 2kg Pork Ribs
- 100ml Soju (Korean rice wine)
- A pinch of Whole Peppercorns
- 2 Potatoes
- 1 Carrot
Seasoning Ingredients- 9 Tbsp Soy Sauce
- 2 Tbsp Sugar
- 3 Tbsp Minced Green Onion
- 3 Tbsp Minced Garlic
- 3 Tbsp Cooking Wine (e.g., Mirin)
- 3 Tbsp Plum Extract (Maesil Cheong)
- Pinch of Black Pepper
- 1 Tbsp Grated Ginger
- 3 Tbsp Toasted Sesame Seeds
- 1 Onion
- 100ml Pear Juice
- 400ml Water
- 9 Tbsp Soy Sauce
- 2 Tbsp Sugar
- 3 Tbsp Minced Green Onion
- 3 Tbsp Minced Garlic
- 3 Tbsp Cooking Wine (e.g., Mirin)
- 3 Tbsp Plum Extract (Maesil Cheong)

Cooking Instructions
Step 1
First, let’s prepare the delicious sauce that will give our braised pork ribs their wonderful flavor. In a large bowl, combine 9 tablespoons of soy sauce, 2 tablespoons of sugar, 3 tablespoons of minced green onion, 3 tablespoons of minced garlic, 3 tablespoons of cooking wine, 3 tablespoons of plum extract, a pinch of black pepper, 1 tablespoon of grated ginger, 3 tablespoons of toasted sesame seeds, 1 roughly chopped onion, 100ml of store-bought pear juice, and finally, 400ml of water. Stir everything well until thoroughly combined for a delectable sauce!
Step 2
To effectively remove any gamey odor from the pork ribs and tenderize the meat, we’ll proceed with soaking them. Place the ribs in a generous amount of cold water and let them soak for about 2 hours to draw out the blood. Changing the water once or twice during this process is recommended for better results. After soaking, rinse the ribs thoroughly under cold running water.
Step 3
This is the second step for eliminating unwanted odors! Place the pork ribs in a pot, add a pinch of whole peppercorns and 100ml of soju to help with odor removal. (You can also add a few bay leaves for extra aroma, if you like.) Cover the ribs with water and bring it to a rolling boil over high heat. Blanching the ribs like this will effectively get rid of any porky smell.
Step 4
Once the water comes to a boil, add the pork ribs and let them boil vigorously for about 5 minutes over high heat. This process helps to remove surface impurities and firm up the meat slightly.
Step 5
Transfer the blanched pork ribs to a colander to drain the hot water. Immediately rinse them thoroughly under cold running water. It’s important to wash away any residual blood or impurities clinging to the bones to ensure a clear and clean-tasting braised dish.
Step 6
Now, place the thoroughly rinsed pork ribs into the prepared sauce. Toss them to ensure they are evenly coated, then let them marinate in the refrigerator for at least 1 hour. If you have more time, marinating for 2-3 hours will allow the sauce to penetrate deeper, resulting in an even more flavorful braised dish.
Step 7
It’s time to cook the braised pork ribs using a pressure cooker! Place the marinated pork ribs along with the sauce into the bottom of the pressure cooker. Peel and cut the potatoes and carrots into bite-sized, chunky pieces, and arrange them over the ribs. Cutting the vegetables slightly larger will prevent them from becoming mushy during cooking.
Step 8
Securely close the lid of the pressure cooker and heat over high heat. Once the whistle starts (when pressure builds up), reduce the heat to medium and continue cooking for another 10 minutes. The time-saving cooking in the pressure cooker will make the ribs exceptionally tender.
Step 9
When cooking is complete, allow the pressure inside the cooker to release completely. Do not rush this step! Once all the pressure has safely dissipated, carefully open the lid. Your delicious, glossy, and incredibly tender braised pork ribs are ready to be enjoyed with a side of warm rice!
