Main Ingredients (Makes 8 skewers)- 4 Linguine pasta strands (cut in half, approx. 10-12cm length)
- 2 white parts of green onions (cut into approx. 4cm lengths)
- 1.5 Shiitake mushrooms
- 1 King Oyster mushroom
- 100g Enoki mushrooms
- 1/3 Onion
- 8 slices of Duck meat (cut into bite-sized pieces)
Egg Wash & Cooking- 1 Egg
- 1 tsp Olive oil
- 1 Egg
- 1 tsp Olive oil
Cooking Instructions
Step 1
First, prepare all 8 ingredients for the skewers. We’ll be making a total of 8 skewers.
Step 2
Peel or trim the ends of the onion, shiitake mushrooms, and king oyster mushrooms, then cut them into 4cm pieces. Cut the white parts of the green onions to a similar length. For the enoki mushrooms, trim the base and separate the strands.
Step 3
Boil the linguine pasta strands until cooked, then rinse them under cold water. (Cutting them to about 10-12cm length makes them easy to use as skewers.)
Step 4
Thread the ingredients onto the skewers in the following order: enoki mushrooms, shiitake mushrooms, onion, duck meat, green onion, and king oyster mushroom. This order creates a nice appearance and helps them cook evenly. (Use the pasta strand as a base by threading it onto the skewer first to hold everything.)
Step 5
Continue threading the ingredients until you have assembled all 8 duck and mushroom skewers.
Step 6
Crack one egg into a shallow bowl and whisk it thoroughly with a fork to create an egg wash.
Step 7
Dip each skewer into the egg wash, ensuring it’s coated evenly on all sides. Let any excess egg wash drip off.
Step 8
Heat 1 tsp of olive oil in a non-stick skillet over medium-low heat. Place the egg-coated skewers in the pan and cook the first side until golden brown. Cook until the duck meat is partially cooked.
Step 9
Once the edges turn golden brown, flip the skewers and cook the other side until equally golden brown. Aim for a slightly crispy exterior.
Step 10
After the exterior is golden brown, carefully add about 1-2 tablespoons of water to the pan. Be cautious not to add too much water, as it can make the skewers soggy.
Step 11
Immediately cover the skillet with a lid and steam for about 1 minute. This steaming step ensures that the duck and mushrooms inside become tender and moist.
Step 12
Remove the lid and continue to cook briefly until any remaining water in the pan has evaporated. This will help re-crisp the exterior.
Step 13
Your delicious duck and mushroom skewers, cooked to perfection with a golden-brown exterior and a moist interior, are now ready! You can cut them into bite-sized pieces for your child or serve them as is.
Step 14
These skewers will be a fantastic part of a meal plan, alongside the ‘Baby Bibimbap + Beef Soybean Paste Stew’ and a pear puree that I’ll be sharing soon!
