Main Ingredients

  • 1kg Duck Breast
  • 100g King Oyster Mushrooms
  • 3 Red Chilies
  • 3 Green Chilies
  • 1/4 Onion (20g)

Cooking Instructions

Thinly slice the duck breast into 2-3mm thick pieces. Slicing it thinly allows the marinade to penetrate better and ensures a tender texture. Trim any rough ends from the king oyster mushrooms with a knife, wash them, and then slice them thinly, about 0.5cm thick, following their natural shape.

Remove the stems from the red and green chilies. Cut them in half lengthwise and carefully scrape out the seeds. Then, slice them diagonally into pieces about 0.5cm wide. These will add beautiful color and flavor to the dish. Slice the onion into strips of a similar size, about 0.5cm wide.

Now, let’s make the delicious bulgogi marinade. In a bowl, combine 2 Tbsp minced scallions, 2 Tbsp minced garlic, 5 Tbsp soy sauce, 5 Tbsp corn syrup (for sweetness), 2 Tbsp sesame oil (for aroma), 1 Tbsp prepared mustard (for a slight kick), 1 Tbsp lemon juice (for brightness), 1 Tbsp toasted sesame seeds, and 1/3 tsp black pepper. Mix everything well until you have a harmonious marinade. Add the thinly sliced duck breast, king oyster mushrooms, chilies, and onion to the marinade. Gently toss everything with your hands to ensure all ingredients are evenly coated. Let it marinate for at least 30 minutes for the best flavor.

Add the marinated duck and mushroom mixture and stir-fry until the duck is fully cooked and the mushrooms and vegetables have released their juices and the sauce has thickened slightly.
