Ingredients

  • 1 bunch fresh water parsley
  • 5 imitation crab sticks

Seasoning

  • 1 Tbsp soup soy sauce
  • 1 Tbsp mayonnaise
  • 1 Tbsp sesame oil or perilla oil
  • 1/2 Tbsp minced garlic
  • 1/2 Tbsp oligodang (corn syrup) or other sweetener
  • Pinch of black pepper
  • Sesame seeds

Cooking Instructions

Step 1

First, separate the leaves and stems of the water parsley. Cut the stems into 2-3 pieces of a suitable length. Do not cut the leaves yet.

Step 1

Step 2

Washing the water parsley without cutting the leaves makes it less cumbersome. Wash the water parsley thoroughly, then cut the leaf parts into 2-3 pieces. Be careful not to cut them too long, as they can tangle when mixing.

Step 2

Step 3

Bring water to a boil in a pot for blanching the water parsley. Once boiling, add a pinch of salt. (Adding salt helps maintain the vibrant color and crispness of the water parsley.)

Step 3

Step 4

When the water is boiling, add the water parsley stems first and blanch for about 30 seconds. Blanch just until the stems are slightly softened.

Step 4

Step 5

After 30 seconds, turn off the heat, add the water parsley leaves, blanch briefly, and then immediately remove them. (Avoid over-blanching to keep the water parsley crisp.)

Step 5

Step 6

Immediately rinse the blanched water parsley under cold running water to cool it down. This helps retain its fresh texture.

Step 6

Step 7

Place the rinsed water parsley in a colander to drain well. Let it sit for a while to allow the water to drip off naturally.

Step 7

Step 8

Next, prepare the imitation crab sticks. Take them out of their packaging.

Step 8

Step 9

Tear the imitation crab sticks into manageable strips along the grain, without breaking them down too finely. This preserves a pleasant chewy texture.

Step 9

Step 10

In a small bowl, combine the soup soy sauce, mayonnaise, sesame oil (or perilla oil), minced garlic, oligodang, and a pinch of black pepper. Mix well to create the dressing. (Set aside the sesame seeds for the final step.)

Step 10

Step 11

Gently squeeze out any remaining water from the water parsley that has been drained in the colander. Be careful not to squeeze too hard, as this could mash the parsley.

Step 11

Step 12

Add the squeezed water parsley and the torn imitation crab sticks to the prepared dressing. Gently mix everything together with your hands, ensuring the seasoning coats all the ingredients evenly.

Step 12

Step 13

Once the dressing is well combined, sprinkle with sesame seeds and give it one final gentle toss to complete this delicious imitation crab and water parsley salad! Adjust the amount of sesame seeds to your preference.
