Kids absolutely love pork ribs! Today, I made glazed pork ribs in soy sauce for my young nephews and nieces. Since they were going to eat it, I simmered it longer than usual. This recipe uses cola to eliminate any gamey smell from the ribs and makes the meat incredibly tender.

Ingredients

  • Pork back ribs 600g
  • Coca-Cola 600ml (any kind)
  • Soy sauce 4 Tbsp
  • Oyster sauce 1 Tbsp
  • Minced garlic 1 Tbsp
  • Cooking wine (Mirin or similar) 2 Tbsp
  • Minced ginger 1/2 tsp (or a pinch of ginger powder)
  • Yuzu syrup (or corn syrup/oligo syrup) 4 Tbsp
  • Water 3 cups
  • Black pepper to taste
  • Sesame seeds for garnish

Cooking Instructions

Here are the pork back ribs. Nowadays, they are usually well-trimmed, so there’s not much special preparation needed.

Instead of cutting the ribs with a knife, use scissors to cut between the bones. Then, rinse them under cold water.

Place the rinsed ribs in a pot and pour in 600ml of Coca-Cola. You can use any type of cola; I often use the one that comes with fried chicken orders.

Boiling the ribs in cola not only removes any gamey odor but also helps to eliminate impurities and makes the meat more tender.

Once the water starts boiling over high heat, reduce the heat slightly and let it simmer for about 10 minutes.

You’ll notice impurities rising to the surface as it boils. Skim these off with a ladle for a cleaner taste.

While the ribs are simmering, let’s prepare the sauce. In a bowl, combine 4 Tbsp soy sauce, 1 Tbsp oyster sauce, 2 Tbsp cooking wine, 1 Tbsp minced garlic, 1/2 tsp minced ginger (or a pinch of ginger powder if you don’t have fresh), 4 Tbsp yuzu syrup (or corn syrup/oligo syrup), and a pinch of pepper. Add 2 cups of water and mix well.

Stir the sauce ingredients thoroughly to ensure they are well combined, especially after adding the water. This helps the flavors meld together.

After simmering, rinse the ribs thoroughly under cold water again. Pay close attention to the cut ends of the bones and wash them diligently by hand to remove any residual blood. This step is crucial for a clean flavor.

Transfer the cleaned ribs to a wide pan. It’s best to arrange them in a single layer if possible, without overcrowding, so they cook evenly.

Pour the prepared sauce over the ribs and begin cooking over high heat.

Continue cooking over high heat with the lid off. You’ll see the ribs start to absorb the soy sauce and change color. Keep stirring frequently, and cook until the sauce is almost completely reduced and has thickened to a glaze. Once the sauce is nearly gone and slightly caramelized, turn off the heat and sprinkle with sesame seeds for a delicious soy-glazed pork rib stir-fry!

Since this dish is for children, I wanted to make the meat even more tender. So, I added an extra cup of water, covered the pot, reduced the heat, and let it simmer gently for a longer time.

I continued to simmer it gently over low heat with the lid on, until all the liquid had evaporated and the sauce was thick and rich.

Simmering it for a long time made the meat so tender that it fell right off the bone, making it very easy to eat. Seeing them enjoy it so much made me feel very proud as a cook.
