Ingredients
  • 1 serving Spaghetti (approx. 100g)
  • 1 cup store-bought Rosé Sauce (approx. 200ml)
  • 10+ Fresh Clams (purged/cleaned)
  • 3 cloves Garlic (thinly sliced)
  • 5 Dried Red Chilies or Peperoncino (broken)
  • 2-3 Tbsp Olive Oil
  • Salt (for boiling water and seasoning)
  • A pinch of Black Pepper (for finishing)

Cooking Instructions

Step 1

First, bring a large pot of water to a boil. Add about half a tablespoon of salt and cook the spaghetti for 1-2 minutes less than the time indicated on the package (usually around 9 minutes). While the pasta cooks, heat 2-3 tablespoons of olive oil in a pan over low heat. Add the thinly sliced garlic and broken dried chilies, and gently sauté until fragrant. Be careful not to burn the garlic!

Step 2

Add the purged clams to the pan with the fragrant garlic oil and stir-fry over medium heat for a moment. Then, pour in about one ladleful (approx. 100ml) of the pasta cooking water. Cover the pan and let it simmer for about 2-3 minutes. You’ll see the clams start to open up fresh during this time.

Step 3

Once most of the clams have opened, add the cooked spaghetti and 1 cup of rosé sauce to the pan. Increase the heat to high and stir-fry quickly, allowing the sauce to coat the pasta and clams evenly as it thickens. Continue to cook and stir for another 1-2 minutes until the sauce has reduced and the pasta is glossy.

Step 4

Finally, adjust the seasoning with salt if needed and finish with a sprinkle of black pepper. (Remember to consider the natural saltiness of the clams and the rosé sauce when adding salt.) Your delicious Clam Rosé Pasta is now complete! For an even richer experience, serve it with creamy corn cheese or a dusting of Parmesan cheese.
