Everyone in my family adores curry! My two sons, in particular, love it so much they’d eat it for every single meal. It makes me jokingly wonder if I was Indian in a past life! Since they love it so much, I always make it for them whenever they ask. Lately, since I’ve started focusing on my diet, the kids haven’t been asking for special meals as much. Then, one day, they mentioned wanting curry. I happened to have some chicken breast at home, which I had bought for my diet, so I decided to make curry with it! Using a store-bought curry sauce made the process incredibly easy and quick. My son was so moved by the taste! I tried it too, and it was so delicious I could have easily eaten a whole bowl. I think I’ll have to make my own diet-friendly curry soon! In about the same time it takes to prepare a 3-minute curry, you can create this flavorful, different tasting, delicious chicken breast curry with an Indian flair. Enjoy!

  • 1/2 medium Onion
  • 400g Water (or 400ml)
  • 1 Egg

  • 5 Tbsp Butter Chicken Curry Roux (ready-made)
  • 1 Tbsp Curry Powder
  • 1 tsp Butter
  • 1 tsp Coriander Powder
  • 1 tsp Cumin Powder

First, prepare all your ingredients meticulously. Slice the chicken breast into bite-sized pieces (about 2-3 cm). Peel and finely chop or slice the onion. Lightly beat the egg to make an egg wash.

Heat 1 teaspoon of butter in a wok or pan over medium heat. Add the sliced chicken breast and chopped onion, and sauté until the onion becomes translucent and the chicken breast turns white on the outside. Sautéing thoroughly at this stage helps remove any gamey smell from the chicken and deepens the flavor.

Once the chicken and onion are well sautéed, pour in 400g (or 400ml) of water and bring it to a boil over high heat. Once boiling, reduce the heat to medium-low. Add 5 tablespoons of the ready-made Butter Chicken Curry Roux and whisk it in thoroughly to prevent lumps. Next, add 1 tablespoon of curry powder, 1 teaspoon of coriander powder, and 1 teaspoon of cumin powder. Stir well to combine. Adding these spices will elevate the curry to a more sophisticated flavor profile.
