Main Ingredients- Boiled chicken breast, 1 piece (approx. 112g)
- Curry blocks, 2 pieces
- Potato, 1 (approx. 90g)
- Onion, 1/2 (approx. 50g)
- Zucchini, 1/4 (approx. 50g)
- Carrot, 1/4 (approx. 35g)
- Cooking oil, 2 Tbsp
- Water, 400ml
Cooking Instructions
Step 1
First, boil the chicken breast until tender, then cut it into pieces about 1cm thick. Peel and dice the potatoes and zucchini into approximately 7mm thick cubes. Peel and thinly slice the carrot to about 5mm thickness, and peel and chop the onion into bite-sized pieces.
Step 2
In a deep frying pan or pot, add the prepared potatoes, carrots, and zucchini. Drizzle with 2 tablespoons of cooking oil.
Step 3
Set the heat to medium and sauté the vegetables for about 1 to 2 minutes, ensuring they are evenly coated with oil, to bring out their flavors.

Next, add the boiled chicken breast. Stir-fry for about 10 to 20 seconds, just until the chicken is lightly coated with the oil. This step helps keep the chicken breast tender.

Pour in 400ml of water and stir to combine all ingredients. Bring the mixture to a boil over high heat. (Note: If you have a larger quantity of vegetables or chicken and anticipate needing more liquid, you can add extra water after it starts boiling.)

Once the mixture comes to a rolling boil, reduce the heat to medium-low. Cover the pot and let it simmer for about 5 minutes, allowing the chicken and vegetables to cook until tender.

After 5 minutes, remove the lid. Use a toothpick to check if the potatoes or carrots are cooked through. If the potatoes are tender, the other vegetables are likely cooked as well. However, if you cut the carrots into larger pieces, continue simmering until the carrots are fully tender.

Once all ingredients are sufficiently cooked, break apart 2 pieces of curry blocks and add them to the pot.

Maintain medium-low heat. Stir continuously with a spatula or ladle to prevent the curry blocks from sticking to the bottom of the pot, and cook until the curry is completely dissolved.

As the curry begins to thicken, it’s important to keep stirring to prevent it from burning. Continue to stir and cook until the curry reaches its rich color and desired consistency.
Step 11
Finally, taste the curry and adjust seasoning if necessary. If it tastes a bit bland, add 1 to 2 pinches of salt and stir well. Your delicious chicken curry is now complete! Serve generously over warm rice for a delightful meal.
