Tender Chicken Breast and Vegetable Porridge

This is a warm and hearty chicken breast and vegetable porridge, perfect for a light meal when you’re feeling under the weather or have a poor appetite, or for a sick family member. The tender chicken breast and an assortment of fresh vegetables come together to create a dish that’s both delicious and nutritious.

Main Ingredients

  • 100g chicken breast tenders
  • 1/2 small potato
  • A little carrot
  • A little green onion
  • 1/4 onion
  • 1 serving of cooked rice (approx. 200g)

Seasoning & Liquid

  • 1.5 Tbsp sesame oil
  • Salt to taste
  • 500ml water (or chicken broth)

Cooking Instructions

Step 1

First, prepare about 100g of chicken breast tenders. To remove any gamey smell and ensure a tender texture, soak the chicken in cold water for about 1 hour to drain the blood. (If you have time, soaking it in milk overnight will make it even softer and tastier.)

If you soaked the chicken in milk, discard the milk and lightly rinse the chicken breast tenders under running water to remove any residue. Pat dry.

Finely mince the chicken breast tenders and all the prepared vegetables (1/2 small potato, a little carrot, 1/4 onion). You can use a food processor or blender for a smoother mince.

Add the minced chicken breast and vegetables to a pot. Pour in 1.5 tablespoons of sesame oil.

Place the pot over medium heat and stir-fry for about 2-3 minutes until the ingredients are well combined and fragrant. Sauté until the chicken breast tenders turn white and are partially cooked.

Add 500ml of water (or chicken broth) and 1 serving of cooked rice to the sautéed ingredients. Stir well to combine. (For an even smoother texture, you can add a little glutinous rice flour or use soaked rice. Today, we’re using cooked rice for simplicity.)

Bring the mixture to a boil over high heat. Once it starts to bubble, reduce the heat to medium-low. Let it simmer uncovered.

While the porridge is simmering, finely mince the green onion. Once the chicken and vegetables are cooked, add the minced green onion and simmer for a little longer.

Stir occasionally to prevent sticking to the bottom of the pot. Continue to cook, stirring, until the rice grains have broken down and the porridge has thickened to your desired consistency. Season with salt to taste. Your delicious chicken breast and vegetable porridge is ready!
