Main Ingredients

  • 20g butter
  • 1/8 onion, finely minced
  • 2 chicken breasts (approx. 200g)
  • A handful of mushrooms (shiitake, button, or your preference)
  • 1/2 block tofu (approx. 150g)
  • 1 egg
  • 30ml milk (2 Tbsp)
  • 1 Tbsp cornstarch (or potato starch)
  • 1 Tbsp all-purpose flour
  • 1 Tbsp breadcrumbs
  • 1 slice cheddar cheese (optional, or a fried egg)

Cooking Instructions

Step 1

First, melt 20g of butter in a pan over low heat. Add the finely minced onion and sauté gently until translucent, bringing out its natural sweetness without browning.

Once the onion is slightly softened, add the finely chopped mushrooms and cook until their moisture has evaporated. Set the cooked vegetables aside to cool slightly.

Wrap the 1/2 block of tofu in a cheesecloth or clean kitchen towel and squeeze out as much water as possible. Removing excess moisture is key to ensuring the mixture holds its shape well.

Finely mince the 2 chicken breasts with a knife or process them in a food processor. Lightly season the minced chicken with black pepper.

In a large bowl, combine the squeezed tofu, minced chicken, and the cooled sautéed onion and mushrooms. Add 1 Tbsp cornstarch, 1 Tbsp flour, 1 Tbsp breadcrumbs, 1 egg, and 30ml milk. Mix and knead until the ingredients are well combined and sticky. (If making for a baby, set aside a portion before adding salt/pepper).

Form the mixture into a cohesive ball, then divide it into portions. Shape each portion into a round, flattened hamburg steak. (The cute one on the top right in the photo is for a baby!)

Heat a frying pan over medium heat and add a generous amount of oil. Carefully place the shaped hamburg steaks into the hot oil and cook until golden brown on both sides. Avoid high heat, which can burn the outside before the inside is cooked.

Once browned, reduce the heat to the lowest setting. Cover the pan and cook for about 3 minutes per side, flipping regularly. Briefly lifting the lid occasionally to let steam escape can help create a better texture. This gentle, steaming process is crucial.

After cooking for approximately 10-12 minutes, insert a skewer or fork into the center to check for doneness; clear juices should run out. If cooked through, place a slice of cheddar cheese on top of each hamburg steak. Cover the pan, turn off the heat, and let the residual heat melt the cheese.
