I made a delicious braised dish using tender chicken breast and chewy quail eggs. Because it’s chicken breast, it’s wonderfully tender and mild, with the irresistible sweet and savory flavor that kids love. It’s the perfect side dish for rice!
Main Ingredients- 400-500g fresh chicken breast
- 400g boiled quail eggs
- 1-2 Cheongyang peppers (optional, omit if serving to young children)
- 2-3 bay leaves
- 300-400ml milk (for removing chicken odor)
Braising Sauce Ingredients- 5 Tbsp kelp soy sauce
- 1 Tbsp soup soy sauce
- 1 Tbsp oyster sauce
- 1 tsp minced garlic
- 3 Tbsp oligosaccharide (adjust sweetness)
- 1.5-2 Tbsp sugar (adjust sweetness)
- 1 cup water (200ml)
- 1 Tbsp sesame oil
- 1 Tbsp toasted sesame seeds
- 5 Tbsp kelp soy sauce
- 1 Tbsp soup soy sauce
- 1 Tbsp oyster sauce
- 1 tsp minced garlic
- 3 Tbsp oligosaccharide (adjust sweetness)
- 1.5-2 Tbsp sugar (adjust sweetness)
- 1 cup water (200ml)
- 1 Tbsp sesame oil
- 1 Tbsp toasted sesame seeds
Cooking Instructions
Step 1
First, it’s important to remove any gamey or unpleasant odors from the fresh chicken breast. Prepare the chicken breast, then soak it in milk for about 20-30 minutes. The milk effectively absorbs the chicken’s odors. Afterwards, rinse it thoroughly under cold water. Then, boil the chicken breast with bay leaves for 20 minutes. After boiling, rinse the chicken breast again under cold water to remove any impurities and let it cool slightly before proceeding.
Step 2
Once the boiled chicken breast has cooled slightly, shred it into bite-sized pieces along the grain. Shredding it this way allows the sauce to penetrate better, making it even more delicious.
Step 3
Gently rinse the boiled quail eggs 1-2 times under cold running water. After peeling them, place the quail eggs in a colander to drain the excess water.
Step 4
Now, let’s make the delicious braising sauce. In a bowl, combine the kelp soy sauce, soup soy sauce, oyster sauce, minced garlic, oligosaccharide, sugar, and 1 cup of water. Mix thoroughly until the sugar is completely dissolved. The basic braising sauce is now ready.
Step 5
Now, let’s start braising. Pour the prepared quail eggs and the mixed soy sauce mixture into a pot. Bring to a boil over medium-high heat and braise for 10 minutes to allow the sauce to infuse into the quail eggs. If you’re adding Cheongyang peppers, include them at this stage.
Step 6
After 10 minutes, add the shredded chicken breast to the pot. Gently mix everything together to combine the chicken breast and quail eggs. Continue to braise over low heat for another 15 minutes, stirring occasionally to prevent sticking. The dish is ready when the sauce has reduced and the ingredients are glossy.
Step 7
Finally, just before turning off the heat, stir in 1 tablespoon of sesame oil and 1 tablespoon of toasted sesame seeds for a fragrant finish. The dish is complete when all the ingredients are well coated with the flavorful sauce! It tastes even better as it cools down.
