Tender Chicken Breast and Fish Cake Stir-fry
A Delicious and Hearty Stir-fry with Added Chicken Breast
Enjoy a staple Korean side dish, fish cake stir-fry, elevated with the addition of protein-rich chicken breast! This recipe is a crowd-pleaser, perfect for lunchboxes or when you need a quick and satisfying side dish. Even if chicken breast can sometimes be dry, stir-frying it with fish cakes makes it more palatable, especially for children. The subtle sweetness and umami create a delightful flavor combination that pairs wonderfully with rice.
Main Ingredients- 3 sheets of square fish cakes (eomuk)
- 200g chicken breast (pre-cooked or raw)
- 1/2 onion
- 1/3 stalk green onion
- 1 Tbsp soy sauce
- 1 Tbsp low-sodium fish sauce
- 1.5 Tbsp corn syrup (or other liquid sweetener)
- 1/2 Tbsp toasted sesame seeds
Cooking Instructions
Step 1
For the chicken breast, I’ve used a pre-cooked, ready-to-eat variety. If you’re using raw chicken breast, simply boil it in water until cooked through, then shred or cut it into bite-sized pieces before stir-frying.
Step 2
Prepare the square fish cakes by cutting them into bite-sized pieces. A common method is to cut each sheet into three sections horizontally, then slice them into about 1cm strips. Julienne the onion. Cut or shred the chicken breast to a similar size as the fish cakes. Finely chop the green onion for garnish.
Step 3
Heat a little cooking oil in a pan over medium-low heat. Add the julienned onion first and stir-fry until it becomes translucent and releases its sweet aroma. Cooking the onions first enhances their sweetness.
Step 4
Once the onions are softened, add the prepared fish cakes and chicken breast to the pan. Stir-fry them together. (Tip: I used red onion for a beautiful color, but regular yellow onion works great too!) Keep stirring occasionally to prevent the ingredients from sticking together.
Step 5
Now it’s time to add the seasonings. Pour in 1 tablespoon of soy sauce, 1 tablespoon of low-sodium fish sauce, and 1.5 tablespoons of corn syrup. Stir-fry everything until the sauce evenly coats all the ingredients. You can adjust the amount of soy sauce to your preference. For a deeper flavor, adding 1 tablespoon of oyster sauce is also a delicious option.
Step 6
Once everything is well combined and glossy from the sauce, turn off the heat. Sprinkle the chopped green onions and toasted sesame seeds over the stir-fry. Gently toss everything together. The sesame seeds add a nutty aroma, and the green onions provide a fresh finish. This dish is delicious served immediately while warm, or can be cooled and stored as a side dish.
