Rice Bowl Ingredients- 2 bowls of cooked rice
- 4 pieces chicken tenderloin (approx. 200g)
- 1/2 medium onion
- 3 fresh shiitake mushrooms
- 1 package enoki mushrooms (100g)
- Minced green onion, for garnish
- 3 fresh eggs
- 1 tsp sesame oil
- Pinch of black pepper
- 1 tbsp cooking oil
- 1.8g furikake (or to taste)
Sauce (Broth)- 2 tbsp soy sauce (or seasoned soy sauce)
- 1 tsp tuna extract (for umami boost!)
- 2 tbsp mirin (sweet cooking wine)
- 1.5 cups dashi broth (approx. 300ml)

Cooking Instructions
Step 1
First, prepare the dashi broth, which will form the base of your delicious rice bowl sauce. Add one piece of kombu (approx. 5x5cm) to 1.5 cups (about 300ml) of water and let it steep for 10 minutes at room temperature. You can also boil kombu in cold water directly, but steeping it allows for a deeper umami flavor. After 10 minutes, remove the kombu.
Step 2
Prepare the vegetables for easy eating. Trim the base of the enoki mushrooms and cut them in half. Remove the stems from the shiitake mushrooms and slice the caps about 0.5cm thick. Peel and thinly slice the onion.
Step 3
Make the egg mixture for a wonderfully tender texture. Crack 3 fresh eggs into a bowl. Add 1 tsp of sesame oil for a nutty aroma and a pinch of black pepper. Gently whisk the eggs with a fork or chopsticks, being careful not to create too much foam. Over-whisking can make the eggs tough when cooked.
Step 4
Combine all the sauce ingredients into the prepared dashi broth and mix well. Add 1 tsp of tuna extract and 2 tbsp each of soy sauce and mirin. Adjust the seasoning with a pinch of salt and pepper if needed. Pre-mixing the sauce makes cooking much smoother.

Now, let’s start stir-frying. Heat a medium-sized pan over medium heat and add 1 tbsp of cooking oil. Cut the chicken tenderloin into 1cm pieces and add them to the pan. Sauté until the surface turns white. Sprinkle a little black pepper to help eliminate any gaminess from the chicken.

Once the chicken is about 50% cooked, add the sliced onions to the pan and continue to stir-fry. Cook until the onions become translucent and release their sweet aroma. Stir-frying the onions with the chicken allows their sweetness to meld beautifully with the chicken’s flavor.

When the onions are about half-cooked and tender, add the sliced shiitake mushrooms and stir-fry for another 1-2 minutes, just until their fragrance is released. The distinct flavor of shiitake mushrooms complements the chicken wonderfully, adding depth to the dish.
Step 8
Once the ingredients are well stir-fried, pour all the prepared sauce (broth) into the pan. Keep the heat at medium and simmer until the chicken is fully cooked. Skim off any foam that rises to the surface for a cleaner broth.
Step 9
When the chicken is cooked through, add the enoki mushrooms and simmer for another moment. Enoki mushrooms cook very quickly, so don’t overcook them. They should retain a pleasant slight crispness.
Step 10
Now it’s time to cook the eggs, the star of this rice bowl! Reduce the heat to low. Drizzle the whisked egg mixture evenly over the entire pan. Immediately cover with a lid and cook on low heat until the eggs are about 80% set. The egg whites should be fully cooked, while the yolks remain slightly runny for a moist and creamy texture.

Spoon the warm cooked rice into a bowl. Generously top the rice with the cooked chicken, vegetables, and the perfectly cooked eggs. Sprinkle some furikake over the rice for an added layer of flavor.
