Main Ingredients

  • 10 cabbage leaves (outer or inner leaves can be used)
  • 280g beef (for bulgogi or shabu-shabu)
  • 1 bunch enoki mushrooms
  • 1/2 white part of a leek

Seasoning and Sauce

  • 2 Tbsp soy sauce
  • 2 Tbsp water
  • 1 Tbsp vinegar
  • 1/2 Tbsp sugar
  • 1/2 ~ 1 red chili pepper (minced)
  • A little wasabi (Japanese horseradish)

Cooking Instructions

Prepare about 10 fresh cabbage leaves. You can also use leftover outer or inner leaves from other dishes.

Briefly soak the prepared cabbage leaves in water, then rinse them thoroughly several times under running water to remove any dirt or debris.

Thinly sliced beef, like bulgogi or shabu-shabu cut, works best for rolling with cabbage. If you have thicker cuts, slice them thinly. Gently pat the beef dry with paper towels to remove excess blood. Lightly season with salt and pepper.

Bring a generous amount of water to a boil in a large pot and add about 1/2 Tbsp of coarse salt. Once boiling, add the cabbage leaves and blanch them for about 2-3 minutes until tender but not overly mushy. (If undercooked, the crispness might be too pronounced and affect the taste.)

Do not rinse the blanched cabbage leaves immediately with cold water. Instead, spread them out on a colander in a single layer and let the moisture evaporate naturally. This prevents excess water from escaping when you pan-fry the rolls.

Lightly sear the seasoned beef in a pan with a little oil over low heat. You only need to cook the surface slightly; it doesn’t need to be fully cooked at this stage.

Cut the pre-seared beef into manageable pieces, about the thickness of a pinky finger, for easy rolling.

After letting the cabbage leaves drain on the colander, gently press them with your hands to squeeze out any remaining moisture. This ensures the rolls will pan-fry nicely.

The thick stems of the cabbage leaves can be difficult to roll and might create an unpleasant texture. You can lightly shave them down or thin them out with a knife. Be careful not to remove too much of the stem.

Finely julienne the white part of the leek. Trim the base of the enoki mushrooms, rinse them lightly, and then pull them apart into smaller strands.

Lay a cabbage leaf flat, place the pre-seared beef, julienned leek, and enoki mushroom strands onto it, distributing them evenly. Then, carefully roll the cabbage leaf tightly around the filling.

Heat a generous amount of cooking oil in a pan over medium-low heat. Place the cabbage and beef rolls in the pan and cook, turning them gently, until all sides are golden brown and crispy. The leeks and enoki mushrooms cook quickly, so avoid overcooking them. (Optional Tip: For a richer flavor, you can dip the rolls in beaten egg or coat them lightly with tempura batter or starch before frying. However, they are also delicious pan-fried as is, to enjoy the natural sweetness of the cabbage.)

In a small bowl, combine 2 Tbsp soy sauce, 2 Tbsp water, 1 Tbsp vinegar, and 1/2 Tbsp sugar. Mix well to create a dipping sauce. For an extra touch, add minced red chili pepper for color and flavor. A small amount of wasabi mixed into the sauce just before serving adds a pleasant kick.

Since the dipping sauce is not overly salty, you can also drizzle it lightly over the finished cabbage and beef rolls. This allows the natural flavors of the ingredients to harmonize beautifully.
