Main Ingredients- 380g Pork Tenderloin
- 1/2 cup Soju (using a paper cup for measurement)
- 3 Bay Leaves
Cooking Instructions
Step 1
Prepare 380g of pork tenderloin and cut it into large pieces, about 7cm long. To make it easier to shred the meat later, pay attention to the direction of the grain when cutting.
Step 2
To effectively remove any gamey smell from the pork tenderloin, place the tenderloin, 1/2 cup of soju (measured with a paper cup), and 3 bay leaves in a pot and blanch them together.
Step 3
Once the water comes to a boil, reduce the heat to medium and continue to simmer for another 15 minutes. This process will tenderize the meat and eliminate any unwanted odors.
Step 4
Drain the blanched pork on a sieve and let it cool slightly. Allowing the meat to cool a bit will help it maintain its shape when you shred it by hand.
Step 5
Once slightly cooled, shred the pork along the grain into thin, bite-sized pieces. Shredding them thinly will allow the sauce to penetrate better.
Step 6
In a clean pot, add the shredded pork and pour in 350ml of water. (Optional: Using anchovy or kelp broth instead of water will add a deeper, richer umami flavor.)
Step 7
Add 7 Tbsp soy sauce, 2 Tbsp sugar, 2 Tbsp mirin, 1/2 Tbsp minced garlic, and 1 Tbsp Yeondoo (or light soy sauce). Mix well and start cooking over medium heat.
Step 8
As the sauce begins to reduce and thicken, add 1 Tbsp oligodang and simmer for a bit longer to achieve a glossy finish. Just before turning off the heat, drizzle in 1 Tbsp sesame oil for a nutty aroma, completing your delicious Jangjorim!
