  • Soy sauce 4 Tbsp
  • Sugar 2 Tbsp
  • Corn syrup or rice syrup 2 Tbsp
  • Cooking wine (Mirin) 2 Tbsp
  • Plum extract 1 Tbsp
  • Minced garlic 1 Tbsp
  • Sesame oil to taste
  • Sesame seeds a pinch

Cooking Instructions

Step 1

First, prepare the pork ribs. Using a knife, carefully cut between the bones to separate them into 2-3 cm thick pieces. This helps the sauce penetrate better and makes them easier to eat.

Removing blood is a crucial step to eliminate any gamey smell and tenderize the meat. Place the cut ribs in a bowl of cold water and let them soak for about 30 minutes to drain out the blood.

To further tenderize the ribs and remove any remaining odors, we’ll blanch them briefly. In a pot, bring enough water to a boil with 1 tsp of doenjang and 3 bay leaves. Once the water is boiling, add the ribs and blanch them for about 5 minutes.

While the ribs are blanching, let’s make the delicious braising sauce. In a bowl, combine 350ml water, 4 Tbsp soy sauce, 2 Tbsp sugar, 2 Tbsp corn syrup, 2 Tbsp cooking wine, 1 Tbsp plum extract, and 1 Tbsp minced garlic. Stir well until the sugar is dissolved. We’ll add the sesame oil and seeds at the end.

Remove the blanched ribs from the pot and rinse them gently under cold running water. This step helps wash away any impurities or excess fat, ensuring a cleaner flavor.

In a wide, deep pan or pot, place the prepared ribs. Pour in the braising sauce and the 350ml of water used for blanching. Ensure the ribs are well-covered by the liquid.

Bring the mixture to a boil over medium-high heat. Once boiling, reduce the heat to medium-low. Spoon the sauce over the ribs continuously as they cook, allowing the flavors to meld. Continue to simmer and reduce the sauce until it’s thick and coats the ribs, which should take about 20 minutes. Stir occasionally. Drizzle with sesame oil and sprinkle with sesame seeds just before serving for an extra boost of flavor!
