Main Ingredients

  • 600g Pork Tenderloin
  • 1 stalk Green Onion

Seasoning Ingredients

  • 1 ladle Soy Sauce (approx. 180ml)
  • 1 Tbsp Mirin (or cooking wine)
  • 3 Tbsp Sugar
  • 2 Tbsp Oligodang (corn syrup)
  • 1 Tbsp Ginger Syrup (or 1/2 tsp minced ginger + a little sugar)

Cooking Instructions

First, fill a pot with plenty of water and bring it to a boil. We’ll add ingredients to remove any gamey odor from the pork as it cooks.

Prepare 600g of pork tenderloin. Cut it into bite-sized pieces that are easy for children to eat. If you prefer a chewier texture, you can cut them slightly thicker.

Once the water is boiling, add the sliced pork, the washed green onion, and 1 tablespoon of mirin. Mirin helps to eliminate any pork odor and tenderizes the meat.

Keep the heat on high and simmer the pork for about 20 minutes. It’s important to cook the meat until it’s fully done. Skimming off any foam that rises to the surface will result in a cleaner flavor.

When the pork is cooked through, turn off the heat and carefully remove the cooked pork from the pot. Let it cool slightly, then shred it into small pieces by hand while it’s still warm. This allows the sauce to penetrate deeply, making it more flavorful. If there are bones, remove them before shredding the meat.

Now, let’s make the braising sauce. Ladle out 3 ladles of the pork cooking liquid. Add 1 ladle of soy sauce, 3 tablespoons of sugar, and 2 tablespoons of oligodang to the liquid and mix well. Oligodang adds a glossy sheen and a mild sweetness.

If you have homemade ginger syrup, add 1 tablespoon. If not, you can use 1/2 teaspoon of minced ginger mixed with a little sugar. Ginger enhances the flavor of the braised pork and aids digestion.

Return the shredded pork to the pot with the prepared sauce. Simmer over medium-low heat for about 10 more minutes. Taste as you go and adjust the sugar or soy sauce according to your preference. If it’s for children, consider making it slightly less salty.
