Ingredients- 300g Boiled and prepared fern shoots (Gosari)
- 1 Tbsp Minced green onion
- 1 Tbsp Olive oil
- 1 Tbsp Cooking wine (Mirin or similar)
- 60ml Kelp broth
- A pinch of toasted sesame seeds

Cooking Instructions
Step 1
Today’s recipe uses dried fern shoots, also known as Gosari. We’ll be preparing them by soaking dried Gosari.
Step 2
Here are the dried fern shoots. Place them in a bowl with plenty of cold water and soak for 2 to 3 hours until fully rehydrated. This soaking process is key to achieving tender fern shoots.
Step 3
These are the fern shoots after soaking in cold water for 3 hours. You can see they’ve become quite soft. Let’s move on to the next step.
Step 4
In a large pot, bring plenty of water to a boil. Once boiling, add the soaked fern shoots and begin to cook. When the fern shoots look plump and the stems feel tender to the touch, turn off the heat. Keep the lid on the pot and let it steam for another 2 to 3 hours. This steaming process is the secret to extra-tender Gosari. After steaming, drain the fern shoots and rinse them thoroughly under cold running water. Finally, drain them well in a colander. Your dried fern shoot preparation is complete!
Step 5
Now, cut the boiled fern shoots into bite-sized pieces. They can be a bit difficult to eat if they’re too long. It’s time to season the Gosari. In a bowl, combine the cut fern shoots with 1 tablespoon of perilla oil, 1.5 tablespoons of Korean soup soy sauce, and 0.5 tablespoon of minced garlic.
Step 6
Using your hands, gently massage the seasonings into the fern shoots, ensuring they are evenly coated. Let this marinate for about 5 to 10 minutes. This resting period allows the flavors to penetrate the Gosari, forming the base for a delicious stir-fry.
Step 7
Heat 1 tablespoon of olive oil in a pan over medium heat. Add the marinated fern shoots and stir-fry for about 1 minute to release their fragrance. Next, pour in 60ml of kelp broth and stir to combine. Cover the pan and simmer over low heat for 3 minutes. Finally, add 1 tablespoon of cooking wine and stir-fry over medium-high heat briefly to evaporate any excess moisture and add a glossy finish.
Step 8
Finish by sprinkling a pinch of toasted sesame seeds for nutty flavor and give it one final toss. Your delicious Gosari stir-fry is now ready to be enjoyed with a warm bowl of rice!
