Diet-Friendly Braised Chicken Breast: A Delicious and Healthy Side Dish
This recipe transforms ordinary chicken breast into a tender and flavorful side dish. Marinated in milk, it becomes wonderfully soft and chewy, coated in a savory soy-based glaze. It’s a perfect, light addition to any meal, especially for those mindful of their diet. We’ll also add a touch of freshness with seasoned chives.
Main Ingredients- 1 Chicken breast (approx. 200g)
- 1 cup Milk (200ml)
- A handful of Chinese chives (approx. 20g)
Chicken Marinade- Pinch of Herb salt
- 1/2 tsp Sesame oil
- Pinch of Herb salt

Cooking Instructions
Step 1
Start by preparing the chicken breast. Place 1 chicken breast in a bowl and pour 1 cup of milk over it. Let it soak for about 10 minutes. The milk will help tenderize the chicken and remove any gamey odors.
Step 2
While the chicken is soaking, prepare the Chinese chives. Rinse them well, then cut them into bite-sized pieces, about 3-4 cm long. In a separate small bowl, combine the chive salad dressing ingredients (1 tsp soy sauce, 1 tsp gochugaru, 1 tsp vinegar, 1 tsp crushed sesame seeds, 1/2 tsp sesame oil). Add the cut chives to the dressing and gently toss to coat. Set aside.
Step 3
Drain the chicken breast from the milk and rinse it lightly under running water to remove any excess milk. Pat it dry, then thinly slice it into pieces about 0.5 cm thick. Slicing thinly ensures the chicken absorbs the glaze well and maintains a tender texture.
Step 4
Now, season the thinly sliced chicken breast. Add a pinch of herb salt and 1/2 tsp of sesame oil. Gently massage these into the chicken slices. This step enhances the flavor of the chicken.
Step 5
Heat a non-stick pan over medium heat. Add the seasoned chicken breast slices and spread them out in an even layer. Cook for about 2-3 minutes until the chicken turns opaque and starts to cook through.

Once one side of the chicken is cooked, flip the slices and cook the other side until lightly golden. The chicken should be mostly cooked through at this point, ready for the glaze.

Prepare the soy glaze directly in the pan. Add 1 Tbsp soy sauce, 1 Tbsp mirin, and 2 Tbsp oligosaccharide to the pan with the chicken. If you don’t have oligosaccharide, you can use honey or sugar, but oligosaccharide gives a lovely sheen.
Step 8
Bring the mixture to a simmer. Toss the chicken breast slices to ensure they are evenly coated with the glaze. Let it bubble and reduce for about 3-5 minutes, stirring occasionally, until the sauce thickens slightly and coats the chicken beautifully. Finish by drizzling in 1/2 tsp of sesame oil for extra aroma.
Step 9
To serve, place the prepared seasoned Chinese chives onto your serving plate or bowl. Arrange them neatly as a bed.
Step 10
Finally, place the glistening braised chicken breast slices on top of the chives. This flavorful and tender chicken breast dish is ready to be enjoyed! It’s delicious served over rice as a quick meal or as a side dish.
