- 2 pieces Daikon Radish (about 2cm thick)
- 1/2 Carrot
- 1 stalk Green Onion
Flavor-Enhancing Sauce Ingredients- 1/2 Pear (grated)
- 1/2 Onion (grated)
- 2 Tbsp Minced Garlic
- 10 Tbsp Soy Sauce
- 2 Tbsp Oligodang (or Corn Syrup)
- 1 Tbsp Oyster Sauce
- 5 Tbsp Cooking Wine (Mirin or similar)
- 2 Tbsp Sugar
- 1/2 Tbsp Minced Ginger (or a pinch of ginger powder)
- 1/2 Tbsp Black Pepper
- 1/2 Tbsp Sesame Oil
- 1/2 Pear (grated)
- 1/2 Onion (grated)
- 2 Tbsp Minced Garlic
- 10 Tbsp Soy Sauce
- 2 Tbsp Oligodang (or Corn Syrup)
- 1 Tbsp Oyster Sauce
- 5 Tbsp Cooking Wine (Mirin or similar)

Cooking Instructions
Step 1
First, soak the beef short ribs in cold water for about 3 to 4 hours to remove any blood. It’s best to change the water 3 to 4 times during this process for a cleaner result. Tip: If you’re short on time, soaking the ribs in sparkling water or cola can significantly speed up the blood removal process!
Step 2
Fill a large pot with enough water to cover the ribs and bring it to a rolling boil. Once boiling, add the drained short ribs and blanch them for about 3 minutes. This crucial step helps remove excess fat and any gamey odors, ensuring a cleaner flavor in the final dish.
Step 3
After blanching, rinse the short ribs thoroughly under cold running water and drain them well.

Now, let’s prepare the sauce. In a blender, combine the grated half pear and half onion. Tip: If you don’t have pear, kiwi can be a good substitute for sweetness and tenderizing.

Transfer the blended pear and onion mixture to a bowl. Add all the remaining sauce ingredients: minced garlic, soy sauce, oligodang, oyster sauce, cooking wine, sugar, minced ginger, black pepper, and sesame oil. Mix everything together thoroughly to create a delicious sauce.

Place the blanched short ribs in an airtight container or a deep bowl. Pour the prepared sauce over the ribs, ensuring they are well coated. For the best flavor, let the ribs marinate in the refrigerator for at least 1 hour, or preferably overnight. Marinating is key for the flavors to penetrate deeply, especially for tender results that kids will enjoy!
Step 7
It’s time to cook the ribs. Transfer the marinated ribs to a pot and add 1 cup (200ml) of water. Bring to a boil over high heat, then reduce the heat to medium-low, cover the pot, and let it simmer gently until the meat is very tender. Tip: Using a pressure cooker will significantly reduce cooking time. If using a pressure cooker, you don’t need to add extra water.
Step 8
While the ribs are simmering, prepare the vegetables. Cut the daikon radish and carrot into thick, bite-sized pieces (about 2cm). Slice the green onion diagonally. Tip: If your children enjoy them, consider adding chestnuts or jujubes for extra flavor and texture. You can also use cookie cutters to shape the carrots and radish for a fun presentation that kids will love!

Once the ribs are partially cooked, uncover the pot and carefully skim off any excess fat that has risen to the surface using a ladle. This will make the sauce cleaner. Then, add the prepared daikon radish and carrot to the pot. Continue to cook over medium heat, allowing the sauce to reduce and thicken slightly until the vegetables are tender.

Finally, add the diagonally sliced green onions and simmer for a few more minutes until they are slightly softened. The subtle aroma of the green onions will complete the dish.

When I cooked this, I simmered it for over 40 minutes and found it was still a little tough, although the flavor was excellent!
