We snagged a great deal on 2.5kg of beef ribs from Costco and decided to make this hearty and flavorful So Galbi Jjim right at home. It’s perfect for special occasions or family gatherings.
Main Ingredients- 2.5kg Beef Ribs
- 1 Onion
- 2 Potatoes
- 8 Peeled Chestnuts
Sauce Ingredients- 1/2 Onion
- 1/2 bunch Green Grapes
- 2 Tbsp Minced Garlic
- 15 Tbsp Soy Sauce
- 10 Tbsp Sugar
- 5 Tbsp Sesame Oil
- 1 Tbsp Ginger Powder
- 1/2 Onion

Cooking Instructions
Step 1
Prepare 2.5kg of fresh beef ribs. These generous cuts are sure to whet your appetite!
Step 2
Transferring the ribs to a large basin, I realize just how abundant the portion is! It’s enough for everyone in the family to enjoy generously.
Step 3
It’s crucial to thoroughly remove the blood from the ribs. Soak them in cold water for at least 3 hours, changing the water periodically if needed. Properly draining the blood will ensure a clean taste without any gamey odor.
Step 4
For the braising sauce, blend 1/2 onion and 1/2 bunch of green grapes in a blender until smooth. (Feel free to add kiwi or pear for a different flavor profile. I used what I had on hand today, but the natural sweetness and aroma from the fruit will enhance the dish wonderfully!)
Step 5
Prepare the vegetables and chestnuts to be cooked alongside the ribs. Have 8 peeled chestnuts, 1 onion, and 2 potatoes ready. (You can also add other ingredients like pumpkin, carrots, or shiitake mushrooms according to your preference. I personally don’t care for shiitake mushrooms, so I skipped them this time. This recipe is all about my personal taste! Haha)
Step 6
After stepping out for a bit, I return to find that the blood has been well-drained. The water has taken on a milky hue. (This step of draining the blood before cooking is essential!)
Step 7
In a bowl, combine the blended onion and grapes with 15 Tbsp soy sauce, 10 Tbsp sugar, 2 Tbsp minced garlic, 1 Tbsp ginger powder, and 5 Tbsp sesame oil. Mix well to create the sauce. Taste and adjust the soy sauce or sugar to achieve your desired level of sweetness and saltiness. I prefer a less salty, subtly sweet flavor, so I’ve made it to this balance.
Step 8
Gently toss the blood-drained ribs in the prepared sauce. Letting them marinate for at least 30 minutes will allow the flavors to penetrate better, but I’m a bit impatient today and will proceed to the next step right away! (If you have the time, I highly recommend marinating them.)
Step 9
Using the ‘Multi-Cook’ function on the Cuckoo electric pressure cooker, set the cooking time to 45 minutes. Place the sauced ribs, chestnuts, onion, and potatoes into the cooker and select the appropriate mode.
Step 10
After 45 minutes, a delicious aroma fills the air! The ribs are almost ready to be devoured. (This is such an exciting moment!)
Step 11
For an added touch of luxury, you can include prepared abalone. (This ingredient is optional.)
Step 12
If you’ve added abalone, set the Cuckoo electric pressure cooker to ‘Multi-Cook’ again for an additional 15 minutes. This ensures the abalone cooks to a tender perfection.
Step 13
The So Galbi Jjim is finally complete! The beef ribs are incredibly tender and melt-in-your-mouth delicious. The flavor is deep and savory, without being overly intense. We devoured the entire 2.5kg portion in no time, all thanks to the convenience of the Cuckoo cooker! It’s so easy to make such a fantastic dish just by pressing a button.
