First, prepare 500g of beef suitable for Jangjorim. Place the beef in a pot, add enough water to cover it, and boil. It’s important to boil it until it’s tender enough to be easily shredded and no blood comes out when pierced with a chopstick. Boiling for about 30-40 minutes should be sufficient.

Once the beef is cooked, remove it from the pot and rinse it under cold water. This ‘cold shower’ helps to firm up the texture and remove any impurities. Let the beef cool slightly, then trim off any sinew or excess fat. Shred the beef lengthwise along the grain. Shredding it not too thinly will give it a better chewy texture.

While the beef is cooling, prepare the other ingredients. Peel the whole garlic cloves. Remove the stems from the red and green chilies and slice them diagonally. If you prefer less heat, you can remove the seeds beforehand.
