  • 2 Tbsp soy sauce
  • 1/2 Tbsp oyster sauce
  • 1 Tbsp plum extract (or syrup)
  • 1/3 Tbsp ginger syrup (or a pinch of minced ginger)
  • 1/3 Tbsp perilla oil (for the sauce)
  • 1 Tbsp minced garlic
  • 1 Tbsp chopped green onion
  • 1 Tbsp cooking wine (like mirin or sake)
  • 2 Tbsp water
  • 1/2 Tbsp perilla oil (for the pan)
  • 1/2 Tbsp cooking oil (for the pan)

Start by preparing the fresh asparagus. If possible, select spears that are thick and firm. Trim off the tough woody ends. Then, use a vegetable peeler to lightly shave off the outer skin of the stalks. This step ensures a more tender texture. You don’t need to peel it completely; a light shaving is sufficient to retain some texture.

Cut the prepared asparagus spears diagonally into two pieces. This size makes them easier to wrap with beef and convenient to eat in one bite.

Thinly sliced beef, like that used for shabu-shabu, is ideal for rolling. If you are using bulgogi-style beef, trim any sinew or excess fat and flatten the slices. Don’t worry if the shapes aren’t uniform. Pat the beef slices with paper towels to remove any excess moisture or blood. This helps to eliminate any unwanted odors and results in a cleaner taste. Now, place a piece of the cut asparagus onto a beef slice and roll it up tightly. Don’t stress too much about the appearance; focus on ensuring the asparagus is securely wrapped within the beef.

Let’s make the delicious sauce for our beef rolls! In a bowl, combine soy sauce, oyster sauce, plum extract, ginger syrup, perilla oil (1/3 Tbsp), minced garlic, chopped green onion, cooking wine, and water. Whisk everything together until well combined. You can add a little sugar to the sauce if you prefer a slightly sweeter taste.

Heat a pan over medium-high heat and add the cooking oil and perilla oil (1/2 Tbsp). Carefully place the rolled beef and asparagus seam-side down into the hot pan. Sear them lightly on all sides until they are just browned. Avoid overcooking at this stage; you want to seal in the juices.

Now, pour the prepared sauce into the pan with the beef rolls. Begin to braise them, spooning the sauce over the rolls as it cooks.
