  • 1/2 cup all-purpose flour or pancake mix (approx. 50g)
  • 1 bunch chives or garlic chives
  • 1/2 cup cooking oil (approx. 100ml)

First, prepare the beef slices for jeon. Lay the beef slices one by one on paper towels and gently press to remove any excess blood. Removing the blood will result in a cleaner taste. Season both sides of the beef evenly with 1 tsp salt and 1 tsp black pepper. This step enhances the natural flavor of the beef.

Next, let’s make the egg batter. In a bowl, whisk 4 eggs and add a pinch of salt (optional) until well beaten. If using chives or garlic chives, wash them thoroughly, pat them dry, and finely chop them to about 0.5cm in length. Add the chopped herbs to the beaten eggs. The aromatic vegetables will add flavor and color to your jeon. (Tip: If you want a decorative look, you can adjust the amount of herbs or use only a small amount on top of the beef. Using tender, young garlic chives will add a more delicate and rich flavor.)

Lightly coat the seasoned beef slices with all-purpose flour or pancake mix, ensuring an even layer. Gently shake off any excess flour. I often prefer using pancake mix as it helps the coating adhere better and adds a subtle savory note.

Once the first side is cooked, flip it over and cook the other side until golden. Beef cooks quickly, so avoid overcooking. (Tip: Dipping the beef in egg batter once more before flipping can make the jeon even more tender and moist.
