Introducing a simple yet satisfying domestic beef brisket (uptizinsal) rice bowl recipe that you can easily make at home. Uptizinsal, also known as ‘woosamgyeop’ or beef short rib, is a cut from the belly area that touches the ground when the cow is in a resting position. It features layers of fat and muscle. While the muscle fibers are slightly coarse, the intramuscular fat acts as beautiful marbling, making it a prime cut for its exceptional juiciness and rich flavor. Main Ingredients- 300g beef brisket (uptizinsal)
- 1/2 medium onion
- 1 eringi mushroom
- 5 perilla leaves
- Cooked rice, as needed
Rice Bowl Sauce- 2 Tbsp soy sauce
- 2 Tbsp mirin (rice wine)
- 1 Tbsp sake or soju
- 1 Tbsp oyster sauce
- 1 Tbsp oligosaccharide
- 1 Tbsp plum extract
- 1/4 cup water (approx. 60ml)

Cooking Instructions
Step 1
First, gently pat the beef brisket dry with paper towels to remove any excess blood. Lightly season the beef with salt, then brush a thin layer of olive oil over it. Marinating the beef this way in the refrigerator for about 30 minutes will make it more tender and flavorful. Pepper is optional and can be added to your preference.

Now, let’s prepare the delicious rice bowl sauce. For a rich flavor, combine 2 Tbsp soy sauce, 2 Tbsp mirin, 1 Tbsp sake or soju, 1 Tbsp oyster sauce, 1 Tbsp oligosaccharide, 1 Tbsp plum extract, and 1/4 cup water in a pot. Stir well and bring it to a gentle boil over medium heat. Once it boils, add the thinly sliced onion.

Simmer the sauce over medium-low heat, allowing the onions to fully absorb the flavors. The onions will become translucent and tender, deepening the sauce’s rich taste.
