This beef and seaweed porridge is packed with protein, making it an excellent breakfast option, especially for growing children. Porridge Ingredients

  • 100g minced beef
  • 1/2 bowl rehydrated seaweed
  • 2 Tbsp sesame oil
  • 1/2 Tbsp Korean soy sauce (guk-ganjang)
  • 1/3 Tbsp tuna extract (chamchi-aek)
  • 1 bowl cooked rice
  • 4 bowls water

Beef Marinade Ingredients

  • 1 Tbsp regular soy sauce (jin-ganjang)
  • 1/3 Tbsp sugar
  • 1 Tbsp sesame oil
  • 1/2 Tbsp cooking wine (mirin)
  • 1/2 Tbsp minced garlic
  • Pinch of black pepper

Cooking Instructions

Step 1

First, rehydrate the dried seaweed by soaking it in cold water until fully softened. Rinse the rehydrated seaweed thoroughly, squeeze out excess water, and then finely chop it into bite-sized pieces.

You can use pre-minced beef or mince your own beef at home. Approximately 100g of beef is sufficient.

In a bowl, combine the minced beef with all the marinade ingredients: 1/2 Tbsp minced garlic, 1/2 Tbsp cooking wine, a pinch of black pepper, 1 Tbsp regular soy sauce, 1/3 Tbsp sugar, and 1 Tbsp sesame oil. Gently mix and knead the ingredients into the beef with your hands. Let it marinate for about 10 minutes to allow the flavors to meld.

While the beef is marinating, re-squeeze the water from the finely chopped seaweed and then chop it even finer. Mincing it very small will ensure a tender texture when eaten with the rice.

Now, prepare the pot for cooking the porridge. Add 2 Tbsp of sesame oil to the pot and heat it over medium-low heat.

Once the oil is warm, add the marinated minced beef. Break up any clumps and stir-fry until the beef is fully cooked and has turned a light brown color. It’s important to cook the beef completely.

When the beef is cooked, add the finely chopped seaweed to the pot. Continue to stir-fry for about 2 more minutes, until the seaweed is slightly wilted. Keep the heat at medium and stir to prevent burning.

After stir-frying the beef and seaweed, add 1 bowl of cooked rice to the pot. Pour in 4 bowls of water. Using about 4 times the amount of water to rice will help achieve the desired porridge consistency.

Bring the mixture to a boil over high heat, then reduce the heat to medium-low and simmer until the rice grains are fully softened and the porridge has thickened. Once the rice is tender and mushy, stir in 1/2 Tbsp Korean soy sauce and 1/3 Tbsp tuna extract to season. The tuna extract adds a wonderful umami depth! Stir well and your delicious beef and seaweed porridge is ready!
