[Nutritious Baby Food] Super Simple Beef and Eggplant Gratin Recipe
This is a nutritious special meal that even picky eaters who dislike the texture of eggplant will enjoy when combined with beef. Create a wonderful meal with simple ingredients.
Essential Ingredients- 60g ground beef
- 2/3 small eggplant (wash thoroughly if using the skin)
- 1/2 tomato (seeds removed, finely diced)
- 1-2 slices baby cheese (adjust to preference)
- 1 egg (whole egg, yolk and white)
- 1/2 cup milk (approx. 100ml)
Cooking Instructions
Step 1
First, lightly grease a pan and stir-fry the ground beef and diced tomato over medium-low heat. Cook until the beef is done and the tomatoes are slightly mashed. (Do not cook the eggplant and egg at this stage, as they will be added later.)
Step 2
Add the minced eggplant and 1 egg to the sautéed beef and tomato mixture. Mix well with a fork or spatula. The eggplant will soften as it cooks, and the egg will help bind the ingredients together.
Step 3
Transfer the well-mixed ingredients into a microwave-safe dish. Top with 1-2 slices of baby cheese. The cheese will melt and add a savory flavor.
Step 4
Microwave for 6-7 minutes. It’s ready when the cheese is nicely melted and the gratin is heated through. (Adjust cooking time based on your microwave’s power.)
