- 1 Tbsp coarse salt (for blanching okra)

- 3 Tbsp water
- 2 Tbsp mirin or cooking sake
- 2 Tbsp corn syrup (adjust sweetness to taste)
- 1 Tbsp brown sugar
- 0.5 Tbsp vinegar (for a touch of acidity)
- 1 pinch black pepper (enhances flavor)
- 2 Tbsp soy sauce
- 3 Tbsp water
- 2 Tbsp mirin or cooking sake
- 2 Tbsp corn syrup (adjust sweetness to taste)
- 1 Tbsp brown sugar
- 0.5 Tbsp vinegar (for a touch of acidity)

Cooking Instructions
Step 1
Prepare all your ingredients before you begin cooking. Using fresh okra and good quality thinly sliced beef brisket will result in a more delicious dish.

Bring a pot of water to a boil. Once boiling, add 1 tablespoon of coarse salt and the washed okra pods. Blanch the okra for about 30 seconds, then immediately remove and rinse under cold running water. Be careful not to over-blanch, as this can make the okra mushy. Rinsing in cold water helps maintain a crisp texture.
Step 3
Trim off just the very tips of the ends of the blanched okra. Avoid cutting too much, as this can affect the shape. Just trim the tips slightly.

Now, it’s time to roll the okra with the beef. Lay out one slice of thinly sliced beef brisket. Place one okra pod at one end and roll it up tightly. If the beef doesn’t stick well, you can lightly sear the okra first to help it adhere.
