The key is to lightly salt the radish before cooking! This method preserves the radish’s natural sweetness and enhances its texture. It’s a perfect side dish for any meal!

* **Measurements:** Based on a tablespoon (1T = 1 tablespoon)
* **Main Ingredient:** 1/2 radish (approx. 750g)
* **Seasoning:** 3 Tbsp chopped green onion, 1/2 Tbsp salt, 150ml anchovy-kelp broth, 4 Tbsp fine perilla powder, 1/2 Tbsp minced garlic, 1 Tbsp soy sauce for soup, 1 Tbsp sesame oil, 2 Tbsp cooking oil, a pinch of sesame seeds.

Step 1
1. **Prepare the Radish:** Start by preparing half a radish (about 750g). Cut it into two large pieces, then thinly slice it vertically into strips about 0.5 cm thick. Slicing them too thinly can cause them to break easily, so aim for a moderate thickness.

2. **Salt the Radish:** Place the sliced radish in a large bowl or frying pan. Add 1/2 Tbsp of salt and gently mix with your hands. Let it sit for 20 minutes to salt. During this time, the radish will release water; do not discard this water! We will use it directly for cooking the namul. This step is the secret to tender radish.

3. **Make the Perilla Seasoning:** While the radish is salting, prepare the flavorful perilla seasoning. In a bowl, pour 150ml of anchovy-kelp broth. Add 4 Tbsp of fine perilla powder. Then, add 1/2 Tbsp of minced garlic and 1 Tbsp of soy sauce for soup, mixing well until smooth and combined. Your delicious perilla seasoning is ready.

4. **Stir-fry the Radish (Phase 1):** Transfer the salted radish (along with its juices) to the pan. Add 2 Tbsp of cooking oil and begin stir-frying over medium heat. Cover with a lid and cook for about 2 minutes. Gently shake the pan occasionally while cooking to ensure even cooking and prevent sticking.

5. **Add Seasoning and Stir-fry (Phase 2):** After about 2 minutes, pour in all the prepared perilla seasoning. Reduce the heat to low and continue to cook, covered, for another 5 minutes. Again, gently shake the pan as you cook to help the seasoning meld into the radish and make it even more tender.

6. **Finishing Touches:** Finally, add 3 Tbsp of chopped green onion and 1 Tbsp of sesame oil. Sprinkle with a pinch of sesame seeds. Give everything one final, gentle toss to combine. Your tender and delicious radish namul is now complete! Enjoy it with a warm bowl of rice.
