When you think of low-calorie diet ingredients, chicken breast often comes to mind. How do you usually prepare it? While it’s light and easy to eat, it can also be quite bland and get boring quickly. Today, we’ll be making a hearty and satisfying chicken breast fried rice recipe. Let’s start this simple, healthy one-bowl meal, shall we?
Ingredients- 150g chicken breast
- 200g cooked rice
- 1 stalk green onion
- 1 Korean chili pepper (cheongyang chili)
- 1 egg
- 2 Tbsp cooking oil
- 1 Tbsp oyster sauce
- 1/2 Tbsp sesame oil
- 1 tsp sesame seeds
Chicken Breast Marinade- 1 Tbsp soy sauce
- 1/2 Tbsp sugar
- 1 Tbsp minced garlic
- 1/2 tsp black pepper
- 1 Tbsp cooking wine (mirin or sake)
- 1 Tbsp soy sauce
- 1/2 Tbsp sugar
- 1 Tbsp minced garlic
- 1/2 tsp black pepper
- 1 Tbsp cooking wine (mirin or sake)
Cooking Instructions
Step 1
1. First, finely chop the green onion and mince the Korean chili pepper. Adding the spicy and pungent aroma will make the dish even more delicious until the last bite.
Step 2
2. Slice the chicken breast lengthwise into pieces about 0.7cm thick. In a bowl, combine the chicken breast with the marinade ingredients: 1 Tbsp soy sauce, 1/2 Tbsp sugar, 1 Tbsp minced garlic, 1/2 tsp black pepper, and 1 Tbsp cooking wine. Gently mix and let it marinate for about 10 minutes. Marinating the chicken breast beforehand ensures the flavors penetrate deeply, creating a more harmonious taste when the dish is finished.
Step 3
3. Whisk the egg well and set it aside.
Step 4
4. Preheat a frying pan over high heat for 3 minutes, then reduce to medium heat. Add 1 Tbsp of cooking oil and scramble the egg. Once about 80% cooked, remove it from the pan and set it aside in a separate bowl. Not overcooking it will result in a softer texture.
Step 5
5. Wipe the pan clean with a paper towel, then return it to high heat and add another 1 Tbsp of cooking oil.
Step 6
6. Add the chopped green onion and chili pepper to the pan and stir-fry for about 1 minute to release their aroma. You’ll know it’s ready when a fragrant aroma starts to waft up.
Step 7
7. Now, add the marinated chicken breast to the pan and stir-fry. Since the marinade contains soy sauce, it can burn easily, so reduce the heat to medium from this point onwards.
Step 8
8. It’s crucial to ensure the chicken breast is fully cooked for safety! Continue stirring over medium heat for about 4-5 minutes, ensuring the chicken breast is cooked through and lightly browned.
Step 9
9. Once the chicken breast is cooked, add the cooked rice and break up any clumps with a spatula, mixing well with the other ingredients. Season with 1 Tbsp of oyster sauce for extra umami. Add the scrambled egg and gently combine. (Tip: You can reserve some of the scrambled egg to use as a garnish at the end for a more appealing presentation.) Finally, drizzle in 1/2 Tbsp of sesame oil for a nutty fragrance.
Step 10
10. Pack the fried rice into a bowl, pressing it down slightly. Invert the bowl onto a plate. Garnish with the reserved scrambled egg and a sprinkle of sesame seeds for a visually appealing and satisfying chicken breast fried rice dish.
Step 11
The tender chicken breast, thoroughly coated in the savory sauce, truly enhances the flavor. Why not try making this hearty and delicious chicken breast fried rice? Enjoy your meal!
