Main Ingredients
- 250g chicken tenderloin
- 3 Tbsp potato starch
- A pinch of black pepper
- 1 Tbsp minced garlic
- 0.5 Tbsp butter
- Milk (for tenderizing and removing gamey smell)
Special Soy Sauce
- 2.5 Tbsp soy sauce
- 0.5 Tbsp oyster sauce
- 2 Tbsp oligosaccharide (adjust sweetness to taste)
- 1 Tbsp cooking wine (mirin)
- 2.5 Tbsp soy sauce
- 0.5 Tbsp oyster sauce
- 2 Tbsp oligosaccharide (adjust sweetness to taste)
- 1 Tbsp cooking wine (mirin)
Cooking Instructions
Step 1
First, we’ll prepare the chicken tenderloin to remove any gamey smell and make it wonderfully tender. Place the 250g of cleaned chicken tenderloin in a bowl. Pour enough milk to cover the chicken. Let it soak for about 20 minutes. This will help eliminate any odor and soften the meat.
Step 2
After 20 minutes, discard the milk. Then, gently rinse the chicken tenderloin under running cold water to remove any milk residue and impurities. Rinsing it this way ensures a cleaner flavor.
Step 3
Cut the chicken tenderloin into bite-sized pieces. Smaller, bite-sized pieces are easier to cook and eat. Season the cut chicken tenderloin with a pinch of black pepper. The pepper will help eliminate any lingering gamey taste and add depth of flavor.
Step 4
Now, we’ll give the chicken tenderloin a crispy coating. Place the seasoned chicken tenderloin and 3 tablespoons of potato starch into a zip-top bag or plastic bag. Seal the bag securely and shake gently. This will evenly coat the chicken pieces with a thin layer of starch, ensuring a crispier texture when cooked.
Step 5
Heat a frying pan over medium-low heat. Add 1 tablespoon of minced garlic and 0.5 tablespoon of butter to infuse the oil with flavor. Once the butter is melted and fragrant, add the starch-coated chicken tenderloin. Sear both sides until golden brown. Continue to flip the chicken occasionally to ensure it cooks through evenly.
Step 6
When the chicken tenderloin is almost cooked, it’s time to add the delicious soy glaze! In a small bowl, mix together 2.5 tablespoons of soy sauce, 0.5 tablespoon of oyster sauce, 2 tablespoons of oligosaccharide, and 1 tablespoon of cooking wine to create the sauce. Pour this sauce into the pan with the chicken. Stir and cook over medium heat, allowing the sauce to thicken and coat the chicken evenly. Continue to simmer for about 1-2 minutes until the sauce is glossy.
Step 7
The aroma of sweet and savory soy sauce is filling the air! Your delicious Soy-Glazed Chicken Tenderloin is ready! Serve it warm and beautifully plated for an even more appealing dish. It’s perfect as a side dish with rice, a snack, or even a treat for kids!
