Master the Delicious Lu Rou Fan: A Simple and Flavorful Recipe
I was inspired by a visually appealing dish I saw online and decided to give it a try! This recipe is surprisingly easy and incredibly delicious.
Main Ingredients- 300g pork belly with skin (or pork shoulder is also fine)
- 1 stalk green onion (use mainly the white part)
- 7 cloves garlic
Braising Sauce- 1 Tbsp soy sauce
- 1 Tbsp dark soy sauce (for color and deeper flavor, can substitute with regular soy sauce if unavailable)
- 1 Tbsp sugar
- Root of a green onion (washed clean)
- 1/2 cup water (approx. 100ml)

Cooking Instructions
Step 1
First, let’s prepare all the ingredients. Cut the pork belly into bite-sized pieces (about 2-3 cm). Wash the green onion and cut the white part into long sections. Peel the garlic cloves.
Step 2
Heat a pot over medium heat. Add the cut pork belly and sear it until golden brown on all sides. This step renders out some of the fat, resulting in a richer flavor and a wonderfully chewy texture.
Step 3
Once the pork is browned, add the sliced white parts of the green onion and the whole garlic cloves to the pot. Sauté them with the pork. The aroma from the green onion and garlic will infuse into the pork, creating the foundation for a delicious Lu Rou Fan.
Step 4
Now it’s time to add the braising sauce ingredients to create that signature rich flavor. Pour in the soy sauce, dark soy sauce (use this for a deeper color and flavor, or if you want to enhance the soy sauce taste), sugar, the washed green onion root, and water. Stir everything together well to ensure the sauce is evenly combined.

Reduce the heat to medium-low, cover the pot, and let it simmer for about 20-30 minutes, or until the braising sauce has reduced by about half. Stir occasionally to prevent the pork from sticking or burning. If the sauce becomes too thick, you can add a little more water.
