Main Ingredients- 150-200g minced chicken breast
- 1/4 onion
- 1 Tbsp cooking oil
Tsukune Seasoning- 1 Tbsp cooking sake (or mirin)
- 1 tsp soy sauce
- 1/2 tsp grated ginger (or ginger powder)
- 1 Tbsp starch (potato or corn)
Teriyaki Sauce- 1 Tbsp soy sauce
- 1 Tbsp mirin (or sake)
- 1 Tbsp cooking sake (or mirin)
- 1 Tbsp cooking sake (or mirin)
- 1 tsp soy sauce
- 1/2 tsp grated ginger (or ginger powder)
- 1 Tbsp starch (potato or corn)
Teriyaki Sauce- 1 Tbsp soy sauce
- 1 Tbsp mirin (or sake)
- 1 Tbsp cooking sake (or mirin)
Cooking Instructions
Step 1
First, prepare the minced chicken breast. Peel the onion and finely mince it. Mincing the onion finely will make the tsukune texture softer and blend well with the chicken.
Step 2
In a large bowl, combine the minced chicken breast, finely minced onion, starch, grated ginger (or ginger powder), soy sauce, and cooking sake. Knead the mixture with your hands until it becomes sticky and cohesive. Kneading thoroughly ensures the tsukune holds its shape well when cooked.
Step 3
Heat 1 Tbsp of cooking oil in a frying pan over medium-low heat. Form the tsukune mixture into bite-sized balls and place them in the pan. Pan-fry the tsukune balls on both sides until golden brown and cooked through. Cooking slowly allows the inside to cook evenly.
Step 4
Once the tsukune are partially cooked, push them to one side of the pan. Add all the teriyaki sauce ingredients (1 Tbsp soy sauce, 1 Tbsp mirin, 1 Tbsp cooking sake) to the empty space. The sauce is prepared by mixing soy sauce, mirin, and cooking sake in a 1:1:1 ratio.
Step 5
Toss the tsukune with the sauce over medium-low heat and let it simmer until the sauce thickens and coats the tsukune beautifully. It’s complete! Enjoy this delicious chicken tsukune while it’s warm.
