Spicy and Sweet Kimchi Sauce Seasoning

  • Soy sauce, 50ml (approx. 4.5 Tbsp)
  • Sugar, 50ml (approx. 4.5 Tbsp)
  • Whole garlic cloves, 5 (peeled)
  • Ginger slices, 4 (thumb-sized pieces)
  • Spicy dried chilies or Cheongyang peppers, 2 (seeds removed, thinly sliced diagonally)

Cooking Instructions

First, prepare the beef block for boiling by patting it dry with paper towels to remove any excess moisture. Brush it evenly with cooking wine (or mirin/sake). Line the bottom of a pot with thick slices of onion to prevent the beef from sticking and to add flavor. Place the beef on top of the onions. Cover the pot tightly with a lid that has no steam vents, and cook on very low heat for 30-40 minutes using the ‘low-water’ cooking method. It’s crucial not to open the lid at all during this time, as this ensures the beef cooks gently and remains moist.
