Pork ribs are known for their excellent texture, being both chewy and rich in flavor due to the well-distributed intramuscular fat. This recipe simplifies the process, focusing on proper blood removal and a delicious marinade, making it easy for anyone to follow. Main Ingredients- 1.5kg pork ribs
- 1 potato
- 1 onion
- 1 stalk green onion
- 50g carrot
For Blanching Ribs- Green onion, a portion
- Dried ginger, a portion
Braised Pork Ribs Marinade- 1 onion
- 1 small apple
- 15 Tbsp soy sauce
- 3 Tbsp fish sauce
- 2 Tbsp sugar
- 2 Tbsp plum extract
- 5 Tbsp cooking wine (mirin/sake)
- 2 Tbsp minced garlic
- Ginger powder, to taste
- Green onion, a portion
- Dried ginger, a portion
Braised Pork Ribs Marinade- 1 onion
- 1 small apple
- 15 Tbsp soy sauce
- 3 Tbsp fish sauce
- 2 Tbsp sugar
- 2 Tbsp plum extract
- 5 Tbsp cooking wine (mirin/sake)
- 2 Tbsp minced garlic
- Ginger powder, to taste
Cooking Instructions
Step 1
Begin by removing the blood from the pork ribs, a crucial step for a cleaner taste. Make shallow cuts on the ribs meant for braising, then soak them in cold water for about 30 minutes, changing the water periodically to help draw out more blood.
Step 2
Drain the ribs thoroughly after soaking. Trim any excess fat that isn’t desirable. Cut the ribs into bite-sized pieces. To eliminate any gamey odor and impurities, we’ll briefly blanch the ribs. In a pot of water, add a piece of green onion and dried ginger. Once boiling, add the pork ribs and cook for 2-3 minutes, just until the exterior changes color. Immediately rinse the blanched ribs under cold water to wash away any residue.
Step 3
To further tenderize the meat and add natural sweetness, prepare the apple and onion for the marinade. You can keep the apple skin on for added nutrients after washing it thoroughly. Cut both the apple and onion into large chunks. Place these chunks into a blender and puree them until smooth to create the base for your braising sauce.
Step 4
In your pressure cooker pot, start by adding the pureed apple and onion mixture. Then, arrange the prepared pork ribs attractively on top.
Step 5
Add all the measured marinade ingredients to the pressure cooker. Gently mix everything together, ensuring the ribs are well coated with the marinade. Add approximately 300ml of water. Since a pressure cooker minimizes evaporation, you won’t need to add a lot of liquid.
Step 6
Secure the lid of the pressure cooker and bring it to high heat. Once the pressure indicator starts to whistle or rise, reduce the heat to medium and cook for 10 minutes. After 10 minutes, turn off the heat and let it rest for another 10 minutes to allow the ribs to steam and become tender.
Step 7
After the pressure cooking and resting time are complete, carefully open the pressure cooker lid once the pressure valve has completely released. It’s crucial to ensure all pressure has escaped before opening to avoid any accidents.
Step 8
While the ribs are cooking in the pressure cooker, prepare the vegetables. Cut the potatoes and carrots into large, bite-sized pieces. Slice the green onion and onion similarly. Cutting them large helps them maintain their shape and texture during cooking.
Step 9
Add the prepared potatoes and carrots to the pressure cooker with the ribs. Continue to cook for another 5 minutes. This allows the vegetables to cook through and absorb the rich flavors of the braising liquid.
Step 10
Finally, add the sliced onion and green onion to the pot. Simmer for an additional 5 minutes to allow them to soften and meld their flavors. Taste the sauce and if it’s not salty enough, add a little more soy sauce to your preference. Your delicious braised pork ribs are now ready to be enjoyed!
