Main Ingredients

  • 1kg Pork Belly for Boiled Pork
  • 2 bunches Scallions
  • 5 cloves Whole Garlic
  • 0.5 Tbsp Ginger Powder
  • 1 Onion
  • 1 Apple
  • 2 Tbsp Doenjang (Fermented Soybean Paste)
  • 1 Tbsp Coffee Powder
  • 20 Whole Peppercorns
  • 1/2 cup Rice Syrup (Mulyeot)
  • 1/2 cup Soju

Cooking Instructions

Step 1

In a large pot, combine cold water, 1kg pork belly, 1 bunch of scallions, 5 crushed whole garlic cloves, 0.5 Tbsp ginger powder, 1 onion (quartered), 1 apple, 2 Tbsp doenjang, 1 Tbsp coffee powder, and 20 whole peppercorns. Bring to a boil over high heat.

Once the water begins to boil, add 1/2 cup of rice syrup. The rice syrup helps tenderize the meat and adds a lovely sheen.

When the water reaches a rolling boil, reduce the heat to medium and simmer for 20 minutes. Then, lower the heat to low and cook for another 15 minutes, followed by 10 minutes on the lowest heat setting, ensuring the pork belly is cooked through and tender.

Turn off the heat and let the pork belly rest and steam for 10 minutes. This crucial step allows the juices to redistribute, resulting in exceptionally moist and tender meat.
