Cooking Instructions
Step 1
Begin by applying the first marination ingredients – 2.5 Tbsp unsweetened plain yogurt and 1/2 tsp salt – evenly to the 3 lamb chops. Gently massage the mixture into the meat. Let it marinate for about 10 minutes; this step is crucial for removing any gamey odor and tenderizing the lamb.
Step 2
While the lamb chops are marinating, prepare the garlic. Thinly slice 3 cloves of garlic and finely mince the remaining 2 cloves. Having your aromatics prepped will streamline the cooking process.
Step 3
In a medium saucepan, combine 1 cup of water, 1/2 Tbsp steak seasoning powder, the minced garlic (from 1 clove), and 2 bay leaves. Bring to a simmer over medium heat. Once boiling vigorously, remove from heat and let it cool for about 5 minutes. Then, stir in 1/2 cup of white wine to create the second marinade.
Step 4
Pour the prepared second marinade over the lamb chops that have undergone the first marination. Ensure the chops are well-coated, then let them marinate for another 10 minutes. This step infuses the lamb with deeper flavor.
Step 5
Now, let’s prepare the side vegetables. In a pot, add 1 cup of water, the 5 washed baby potatoes, and the bite-sized carrot pieces. Cover with a lid and boil over medium heat for about 10 minutes, or until the vegetables are tender.
Step 6
After 10 minutes, drain all the water from the pot. Melt 1 Tbsp of butter in a pan over low heat, add the cooked vegetables and 2 pinches of salt. Sauté for about 3 minutes until lightly browned. Finally, sprinkle with a little parsley powder to finish the side dish preparation.
Step 7
The special sauce is also simple to make. In a bowl, combine 2 Tbsp unsweetened plain yogurt, 1 Tbsp mayonnaise, the finely minced garlic (from 1 clove), and a small amount of finely chopped fresh parsley. Whisk everything together until smooth and creamy. Your delicious sauce is ready!
Step 8
Pat the marinated lamb chops dry with a paper towel to remove excess moisture. Then, evenly coat each chop with 1.5 Tbsp of flour. This light dusting of flour helps to seal in the juices during cooking, creating a slightly crispier exterior.
Step 9
Heat a skillet over medium-high heat and add a generous amount of olive oil. Place the floured lamb chops in the hot pan. Sear for about 3-4 minutes per side, until beautifully golden brown and cooked to your desired doneness. Your main dish is almost ready!
Step 10
It’s important to cook the sides of the lamb chops as well. To ensure even cooking and juiciness, periodically spoon some of the hot oil and pan juices over the sides of the chops while they cook. This basting technique will result in an exceptionally moist and flavorful steak. Now, plate your masterpiece and enjoy!
