We’ve added natural sweetness and tenderness by pureeing onions and apples into the marinade, along with a simple yet deeply flavorful secret. Using Korean pear instead of apples, or even a touch of kiwi, will make your braised short ribs even more tender. Perfect for entertaining guests or for a special occasion!
Main Ingredients- 2kg LA Galbi (Beef Short Ribs)
- 2 Apples (or 1 Korean Pear, 1 Kiwi)
- 1 Onion
- 200g Frozen Vegetable Mix (Optional)
Cooking Instructions
Step 1
Before cooking frozen LA galbi, it’s essential to remove the blood. Properly removing the blood ensures a clean and delicious galbi jjim without any gamey taste. Place the LA galbi in a bowl, cover with cold water, and repeat the process of draining and refilling with fresh water 3-4 times to remove excess blood. (Takes about 1-2 hours)
Step 2
While the short ribs are draining, let’s make the flavorful marinade! Peel and roughly chop the onion and apples, then blend them in a blender until smooth. (Tip: Using Korean pear instead of apple provides better sweetness and tenderizing effect, and adding a small amount of kiwi will make the ribs much softer.)

Here’s the finely pureed apple and onion mixture. The natural sweetness from the fruits will enhance the flavor of the galbi jjim.

Add minced garlic, minced ginger, and chopped green onions to the fruit puree to add aromatic flavors.

Now, let’s add the base ingredients for flavor: soy sauce, maesil cheong (plum extract), and honey (or sugar) for sweetness.

Finally, add a generous amount of black pepper to further enhance the flavor of the ribs. Mix all the marinade ingredients thoroughly.

And there you have it – the basic marinade for LA Galbi Jim! Cover with plastic wrap and refrigerate briefly. Since the blood removal process for the LA galbi isn’t fully complete yet, allowing it to marinate will also help in further blood removal.

After completely removing the blood from the LA galbi, pour the prepared marinade over the ribs and mix well by hand to ensure the marinade coats evenly. Cover again and refrigerate for at least 3 hours, or overnight, for a deeper flavor. (Tip: LA galbi can be tough due to freezing or its naturally coarser muscle fibers compared to Korean native beef. Therefore, marinating sufficiently is key to enjoying tender braised short ribs.)
Step 9
Now, it’s time to cook the galbi jjim. Place the marinated LA galbi in a pot or steamer, and add the prepared frozen vegetable mix. Bring to a boil over high heat, then reduce the heat to medium-low, cover, and steam gently for about 1 hour and 30 minutes. Add a little water occasionally if the liquid reduces too much, and be careful not to let it burn.
