Main Ingredients

  • 8 fresh Silver Pomfret
  • 8 thick slices of Radish

Flavorful Sauce

  • 20 Tbsp Soy Marinated Crab Sauce (can substitute with 4 Tbsp Soy Sauce + 2 cups Water)
  • 3 Tbsp Gochugaru (Korean chili powder)
  • 1 Tbsp Minced Garlic
  • 2 Tbsp Mirin (or cooking wine)
  • 4 Tbsp Soy Sauce (adjust to taste)
  • 1 Tbsp Oligosaccharide (for sweetness adjustment)
  • 2 Tbsp Honey (adjust to taste)
  • 1 Tbsp Olive Oil
  • Appropriate amount of fresh Scallions (chopped)

Cooking Instructions

Step 1

Carefully clean the fresh silver pomfret by rinsing under running water, removing scales and guts. Pat dry thoroughly with paper towels. (Trim fins and tail if desired.)

Step 2

In a large bowl, combine all the sauce ingredients (soy marinated crab sauce, gochugaru, minced garlic, mirin, soy sauce, oligosaccharide, honey, olive oil) and mix well to create a delicious sauce. Set aside.

Step 3

Slice the radish into thick pieces, about 1 to 1.5 cm thick. (The radish will release a refreshing flavor that complements the pomfret wonderfully.)

Step 4

In a deep pot or wok, place the sliced radish at the bottom. Arrange the prepared silver pomfret on top of the radish. Pour the prepared sauce evenly over the fish.

Step 5

Bring to a boil over high heat. Once boiling, let it cook until the fish is almost done. Then, reduce the heat to medium and let it simmer to allow the flavors to meld. When the pomfret is nearly cooked and the sauce has thickened slightly, add the chopped scallions and simmer for another minute before turning off the heat.
