Main Ingredients- 3 medium potatoes
- 1/4 head of cabbage
- 1/2 stalk of green onion
Seasoning Ingredients- 1/2 Tbsp white sugar (or regular sugar)
- 1/2 Tbsp chili powder (adjust to your preference)
- 1 Tbsp soy sauce
- 0.8 Tbsp anchovy sauce (for added umami)
- 1 Tbsp sesame oil (for final aroma!)
- 1/2 Tbsp white sugar (or regular sugar)
- 1/2 Tbsp chili powder (adjust to your preference)
- 1 Tbsp soy sauce
- 0.8 Tbsp anchovy sauce (for added umami)
- 1 Tbsp sesame oil (for final aroma!)
Cooking Instructions
Step 1
First, wash the 3 medium potatoes thoroughly. Peel them and slice them into flat pieces, about 1 to 1.5 cm thick. Heat 1 Tbsp of sesame oil in a pan over medium-high heat. Add the sliced potatoes and stir-fry for 1-2 minutes until they are lightly golden brown on the edges. Stir-frying beforehand helps the potatoes hold their shape and enhances their flavor. Add enough water to cover the potatoes (about 1.5 cups), cover the pan with a lid, and bring to a boil over medium heat.
Step 2
While the potatoes are cooking, prepare the 1/4 head of cabbage. Slice it into pieces of similar thickness and size to the potatoes for a pleasant texture when braised. Slice the 1/2 stalk of green onion diagonally. Cutting it not too thinly will add color and a fresh aroma to the dish.
Step 3
After about 10 minutes of simmering the potatoes, check if the water has reduced by half and if the potatoes are tender enough to be easily pierced with a fork. Once the potatoes are cooked, add the sliced cabbage to the pan and gently mix it with the potatoes. The cabbage will soften and add sweetness as it cooks.
Step 4
Now it’s time for seasoning. Add 1/2 Tbsp white sugar, 1/2 Tbsp chili powder, 1 Tbsp soy sauce, and 0.8 Tbsp anchovy sauce to the pan. Using anchovy sauce provides a deep umami flavor, making it more delicious than regular soy sauce alone. After adding the seasoning ingredients, stir gently to combine everything.
Step 5
Continue to simmer over medium-low heat for another 2-3 minutes, allowing the seasoning to evenly coat all the ingredients. Gently shake the pan or stir with a spatula occasionally to prevent the seasoning from burning. Once the sauce has thickened slightly and is well absorbed by the ingredients, turn off the heat. Immediately after turning off the heat, drizzle in 1 Tbsp of sesame oil and mix lightly. This will add a nutty aroma and elevate the dish.
Step 6
Add the sliced green onions and stir gently once more. If desired, sprinkle with toasted sesame seeds for an even more appealing presentation. Serve it warm over a bowl of rice for a delightful meal!
