I made this braised pork ribs (Galbijjim) to celebrate my mother’s birthday. It’s a dish that fills the table with warmth and delicious aromas.
Main Ingredients- 1.5kg Pork ribs
- 1 Onion
- 1/2 Carrot
- 1 Potato
- 1 Scallion (Green onion)
- 3 Shiitake mushrooms
Braising Sauce- 1 cup Soy sauce (200ml)
- 1 cup Water (200ml)
- 1/2 cup Sugar (100ml)
- 1/2 cup Mirin or cooking wine (100ml)
- 3 Tbsp Minced garlic
- 1 Tbsp Minced ginger
- 3 Tbsp Sesame oil
- 1 cup Soy sauce (200ml)
- 1 cup Water (200ml)
- 1/2 cup Sugar (100ml)
- 1/2 cup Mirin or cooking wine (100ml)
- 3 Tbsp Minced garlic
- 1 Tbsp Minced ginger
- 3 Tbsp Sesame oil
Cooking Instructions
Step 1
The secret to delicious Galbijjim lies in thoroughly removing the blood from the pork ribs. Soak the ribs in cold water and change the water every hour for about 2 hours. This process removes any gamey odor, ensuring a clean and savory taste.
Step 2
While the ribs are soaking, let’s prepare the flavorful braising sauce. In a bowl, combine the soy sauce, water, sugar, mirin, minced garlic, minced ginger, and sesame oil. Whisk well until the sugar is dissolved. Preparing the sauce in advance allows the flavors to meld beautifully.
Step 3
Prepare the vegetables that will add texture and flavor to your Galbijjim. Cut the onion into large chunks to allow it to absorb the sauce well. Dice the carrot and potato into bite-sized pieces. Trim the tough stems from the shiitake mushrooms and slice them to a suitable size.
Step 4
Place the blood-rinsed pork ribs into a deep pot. Pour in about 90% of the prepared braising sauce. (Reserve the remaining 10% to adjust the seasoning later, if needed).
Step 5
Cover the pot and bring to a simmer over medium heat for about 20 minutes. The ribs will begin to soften and absorb the delicious sauce.
Step 6
After 20 minutes, add the diced potato and carrot, which are firmer vegetables. Continue to simmer over medium heat for another 15 minutes, keeping the lid on so the ingredients cook evenly.
Step 7
After 15 minutes, add the remaining vegetables – the onion and shiitake mushrooms. Simmer for 10 more minutes over medium heat. Be careful not to overcook them to the point of becoming mushy.
Step 8
Finally, add the chopped scallions and immediately turn off the heat. The residual heat in the pot will gently cook the scallions, releasing their aroma and enhancing the overall flavor of the Galbijjim.
