Main Ingredients

  • 1kg pork ribs
  • 1/2 stalk green onion
  • 1 onion
  • 1/3 carrot
  • 2 Korean chili peppers

First, rinse the 1kg of pork ribs thoroughly under cold water. Soak them in cold water for about 30 minutes to remove any blood. This step is crucial for a clean flavor.

Place the rinsed pork ribs in a large pot and cover them with water. Add 1 Tbsp of doenjang to the water. Boiling the ribs with doenjang helps to eliminate any porky odors, resulting in a cleaner and more delicious dish.

Boil the pork ribs for about 10 minutes. They don’t need to be fully cooked at this stage. Once boiled, remove the ribs from the pot and rinse them briefly under cold water to remove any impurities.

Now, let’s prepare the flavorful marinade for the Dwaeji Galbi Jjim. In a bowl, combine 8 Tbsp of soy sauce, 2 Tbsp of mirin, 1 Tbsp of minced garlic, a pinch of black pepper, and 5 Tbsp of oligodang for a touch of sweetness. Stir well to ensure everything is evenly mixed.

Prepare the vegetables that will add flavor and texture to your braised ribs. Finely chop 2 Korean chili peppers into about 1cm pieces. Finely dice 1 onion. The diced onion will help the sauce adhere better to the meat.
