  • Pork ribs 500g (choose meaty cuts with good bones)
  • Tteokbokki tteok (rice cakes) or similar 2 packs (for added texture and fun!)
  • Green chili peppers 3 (add more if you like it spicier)
  • Red chili pepper 1 (for color and a mild kick)
  • Egg 1 (for making a decorative garnish)
  • Water 2 cups (approx. 400ml, adjust depending on desired consistency)

Cooking Instructions

Step 1

First, let’s prepare the pork ribs to make them tender and remove any gamey odor. In a pot, bring 5 cups (1000ml) of water to a boil with a few pineapple chunks. Once boiling, add the pork ribs and simmer for about 10 minutes over high heat. This process helps to remove impurities and tenderize the meat. After parboiling, rinse the ribs under cold water and drain them well in a colander.

Now, it’s time to braise the ribs in the delicious sauce. In a clean pot, combine 2 cups (400ml) of water, 6 Tbsp of soy sauce, 6 Tbsp of oligodang, and 2 Tbsp of minced garlic. Stir well to create the braising liquid. Add the parboiled pork ribs to the pot. Bring it to a boil over high heat, then reduce to medium-low, cover, and simmer for about 30 minutes, or until the ribs are tender. Stir occasionally to prevent sticking. Add the tteokbokki tteok (or similar) during the last 10-15 minutes of cooking, as they can become mushy if overcooked. (For extra chewiness, you can boil the tteok separately with a drop of vinegar before adding them).

As the sauce starts to thicken and reduce, add the sliced green and red chili peppers. Continue to simmer for about 5 more minutes. Drizzle in a little sesame oil for extra fragrance and sprinkle with black pepper. Finally, add a generous amount of sesame seeds for a nutty finish. Stir everything together to ensure the flavors meld beautifully.
