Main Ingredients
- Beef (for Bulgogi) 480g
- 1/2 Onion
- 1 Green Onion
Marinade Ingredients
- 1/2 Onion (for blending)
- 5 Tbsp Soy Sauce
- 2 Tbsp Brown Sugar
- 1 Tbsp Minced Garlic
- Pinch of Black Pepper
- 4 Tbsp Pear Juice (or commercial pear juice)
- 3 Tbsp Cooking Wine (Mirin or similar)
- 1/2 Onion (for blending)
- 5 Tbsp Soy Sauce
- 2 Tbsp Brown Sugar
- 1 Tbsp Minced Garlic
- Pinch of Black Pepper
- 4 Tbsp Pear Juice (or commercial pear juice)
- 3 Tbsp Cooking Wine (Mirin or similar)
Cooking Instructions
Step 1
Pat the beef dry with paper towels to remove as much blood as possible. Removing the blood is crucial for a clean taste without any gamey odor. Once the blood is removed, mix the beef with about 4 tablespoons of cooking wine. This helps tenderize the meat and further removes any unwanted smells. Let it marinate while you prepare the vegetables.
Step 2
Slice the green onion diagonally into about 1cm thick pieces. Thinly slice the onion and, if using, julienne the carrot. These vegetables add a touch of sweetness and a pleasant crunch when stir-fried with the bulgogi.
Step 3
Now, let’s make the marinade. In a blender, combine the 1/2 onion for the marinade and 4 tablespoons of pear juice. Blend until smooth. The enzymes in the pear will naturally tenderize the meat and add a subtle sweetness. To the blended onion and pear mixture, add 1 tablespoon of minced garlic, a pinch of black pepper, 5 tablespoons of soy sauce, and 2 tablespoons of brown sugar. Mix well to create the marinade.
Step 4
Pour the prepared marinade over the beef that has been pre-marinated with cooking wine. Gently mix with your hands, ensuring the marinade evenly coats all the meat. Proper marination allows the flavors to penetrate deeply for the best taste.

Now, add the sliced green onions, julienned carrots (if using), and sliced onions to the marinated beef.

Gently mix everything together again, making sure the vegetables are also coated with the marinade. Be careful not to overmix or mash the ingredients.

You can cook the bulgogi immediately, but for an even richer flavor, refrigerate it for at least 40 minutes. This marination period allows the flavors to meld beautifully and further tenderizes the meat.

Heat a wok or large pan over medium heat. Add the marinated beef and vegetables and stir-fry until cooked through. Gently separate the meat with chopsticks as it cooks to prevent clumping. Once done, serve hot over steamed rice for a delightful meal!
