Pork neck isn’t commonly eaten, but when prepared as a steak, it becomes incredibly tender, chewy, and delicious. It’s a dish often enjoyed during barbecues, and now you can easily recreate Seoga & Cook’s signature pork neck steak at home with this detailed recipe. If you follow along carefully, anyone can easily make a delicious pork neck steak.
Main Ingredients (Serves 3)- Pork neck steak, 900g
- Fresh pineapple, 1/2
- Eggs (1 per person), 3
- Assorted salad greens, adequate amount
- Butter, 1 Tbsp
Pork Neck Steak Special Sauce- Soy sauce, 2 Tbsp
- Cooking wine (Mirin or Cheongju), 8 Tbsp
- Minced garlic, 2 Tbsp
- Store-bought tonkatsu sauce, 4 Tbsp
- Oligosaccharide (or corn syrup), 4 Tbsp
- Oyster sauce, 2 Tbsp
- Water, 1 cup (approx. 200ml using a paper cup)
Refreshing Salad Dressing- Granulated sugar, 2 Tbsp
- Vinegar (apple cider vinegar recommended), 4 Tbsp
- Mayonnaise, 7 Tbsp
- Olive oil, 3 Tbsp
- Milk, 1/4 cup (approx. 50ml using a paper cup)
- Soy sauce, 2 Tbsp
- Cooking wine (Mirin or Cheongju), 8 Tbsp
- Minced garlic, 2 Tbsp
- Store-bought tonkatsu sauce, 4 Tbsp
- Oligosaccharide (or corn syrup), 4 Tbsp
- Oyster sauce, 2 Tbsp
- Water, 1 cup (approx. 200ml using a paper cup)

- Vinegar (apple cider vinegar recommended), 4 Tbsp

- Milk, 1/4 cup (approx. 50ml using a paper cup)
Cooking Instructions
Step 1
First, lightly season the pork neck steaks with salt and pepper and let them rest for a moment. In the meantime, let’s prepare the delicious steak sauce.
Step 2
Prepare all the ingredients for the pork neck steak sauce: 2 Tbsp soy sauce, 8 Tbsp cooking wine, 2 Tbsp minced garlic, 4 Tbsp tonkatsu sauce, 4 Tbsp oligosaccharide, 2 Tbsp oyster sauce, and 1 cup of water (measured with a paper cup).
Step 3
Combine all the prepared steak sauce ingredients in a saucepan or bowl. Whisk them together thoroughly with a whisk or spoon until well combined and smooth, ensuring there are no lumps.
Step 4
It’s convenient to make the salad dressing in advance as well. For the Seoga & Cook style pork neck steak we’re making today, we’ll also prepare a side salad. This dressing is for that salad. Combine 2 Tbsp sugar, 4 Tbsp vinegar, 7 Tbsp mayonnaise, 3 Tbsp olive oil, and 1/4 cup milk (measured with a paper cup) and mix well.
Step 5
Now, heat a pan over medium heat and melt about 1 Tbsp of butter generously. The rich flavor of butter will enhance the steak’s taste.
Step 6
Once the butter is melted, place the seasoned pork neck steaks in the pan and sear them until they are golden brown and slightly cooked on the outside. Sear each side for about 2-3 minutes.
Step 7
It’s important not to overcook the pork neck; preserving the juices is key. You don’t need to cook the inside completely at this stage; searing the exterior until golden brown is sufficient. The steaks will finish cooking and become tender as they simmer in the sauce.
Step 8
Clean another pan or the same pan and pour in the prepared Seoga & Cook style steak sauce. Bring it to a boil over medium heat. Once the sauce starts to bubble, reduce the heat slightly.
Step 9
When the sauce is vigorously boiling, add the lightly seared pork neck steaks to the pan. Simmer over medium-low heat until the sauce thickens and becomes glossy, coating the steaks. Continue to flip the steaks occasionally to ensure they are evenly coated and cooked through in the sauce.
Step 10
Prepare the eggs as fried eggs according to your preference. A sunny-side-up style, where the yolk remains intact, is particularly recommended as it adds richness and visual appeal when placed on top of the steak.
Step 11
Grill the pineapple slices to serve alongside the steak. Grilling the pineapple enhances its sweetness and adds a lovely caramelized flavor.

Wash the salad greens thoroughly under running water and pat them dry. Prepare them for serving. Fresh greens help cut through the richness of the steak.

Pour the prepared refreshing salad dressing over the salad greens and toss gently. It’s best to toss the salad just before serving to keep the greens crisp.
