This vibrant Winter Greens and Apple Salad is a delightful combination that awakens your taste buds. It’s light enough to enjoy as a standalone salad and its sweet and tangy profile complements any meal beautifully.
Main Ingredients- 1 large handful of tender Winter Greens (approx. 100g)
- 1/4 medium Apple
Dressing Ingredients- 1 Tbsp Fish Sauce
- 2 pinches of Salt (approx. 1/4 tsp)
- 1/3 Tbsp Ginger Syrup (or grated fresh ginger)
- 1/2 Tbsp Plum Extract (Maesil-cheong)
- 1/2 Tbsp Gochugaru (Korean chili flakes)
- 1/2 Tbsp Crushed Sesame Seeds
- 1 Tbsp Apple Cider Vinegar
- 1 Tbsp Fresh Lemon Juice
- 1 Tbsp Fish Sauce
- 2 pinches of Salt (approx. 1/4 tsp)
- 1/3 Tbsp Ginger Syrup (or grated fresh ginger)
- 1/2 Tbsp Plum Extract (Maesil-cheong)
- 1/2 Tbsp Gochugaru (Korean chili flakes)
- 1/2 Tbsp Crushed Sesame Seeds
- 1 Tbsp Apple Cider Vinegar
- 1 Tbsp Fresh Lemon Juice
Cooking Instructions
Step 1
Winter greens are quite delicate and can easily bruise, so it’s important to handle them very gently to avoid a grassy taste. Start by trimming any wilted or damaged leaves and thoroughly washing the greens under running water. Once washed, drain them well in a colander.
Step 2
We’ll use the apple with its skin on for added flavor and nutrients. To ensure it’s clean, gently scrub it with a little baking soda or soak it in a diluted vinegar solution before rinsing thoroughly under running water. Core the clean apple and then slice it into thick matchsticks.
Step 3
Place the drained winter greens, cut into bite-sized pieces of about 5-6 cm (2-2.5 inches), into a large mixing bowl. Add the julienned apple to the bowl as well.
Step 4
Now it’s time to prepare the delicious dressing for the greens and apple. Combine the fish sauce, salt, ginger syrup, plum extract, gochugaru, crushed sesame seeds, apple cider vinegar, and lemon juice in a separate small bowl. Whisk everything together until the dressing ingredients are well incorporated for a richer flavor.
Step 5
Pour the prepared dressing over the winter greens and apple in the large bowl. Instead of using chopsticks, using two spoons makes it easier to gently toss the ingredients without crushing the delicate greens, ensuring the dressing coats everything evenly.
