Delicious Tomato Marinade Salad – Perfect for a Healthy Diet!
Tomatoes are incredibly delicious, aren’t they? After being diagnosed with breast cancer, I started incorporating more tomatoes into my diet before beginning treatment. Remarkably, the tumor, which doctors said might not shrink, reduced to less than one centimeter, and there was no metastasis. While it might not be solely due to tomatoes, I believe eating healthily while undergoing treatment was crucial. This recipe is a testament to the power of good food.
Ingredients- 700g cherry tomatoes, ripe and firm
- 2 cucumbers
- 1 onion
Dressing- 5 Tbsp olive oil
- 3 Tbsp balsamic vinegar
- 1/2 Tbsp dried basil
- 2 Tbsp perilla seed powder (deulkkae garu)
- 5 Tbsp olive oil

Cooking Instructions
Step 1
Prepare the ingredients. You’ll need 700g of cherry tomatoes, 2 cucumbers, and 1 onion. Wash them all thoroughly.
Step 2
Bring a pot of water to a rolling boil. We’ll be using this hot water to blanch the tomatoes.
Step 3
Once the water is boiling vigorously, carefully add all the cherry tomatoes. They will be blanched in the hot water.
Step 4
Blanch the tomatoes for just 1 minute. You’ll notice their skins starting to split. Immediately turn off the heat.
Step 5
Transfer the blanched tomatoes to a bowl of ice-cold water to cool them down. This step makes peeling much easier and helps retain their fresh texture.
Step 6
Gently peel the tomatoes. The skins should slip off easily with just a light touch. If any skins are stubborn, you can peel them off manually.
Step 7
Place the peeled tomatoes, along with any that didn’t split easily, into a large mixing bowl. This adds variety in texture to your salad.
Step 8
Slice the cucumbers. You can cut them into half-moons or cubes, whichever you prefer. Their crispness will be a wonderful contrast.
Step 9
Thinly slice the onion. If you find raw onion too strong, you can soak the slices in cold water for about 10 minutes and then drain them well before adding to the salad. This mellows the flavor.
Step 10
Add the sliced cucumbers and onions to the bowl with the tomatoes.

Now, let’s make the dressing. Add 5 tablespoons of olive oil to the bowl. Then, pour in 3 tablespoons of balsamic vinegar for that signature tangy flavor.

Sprinkle in 1/2 tablespoon of dried basil. Its aromatic notes will enhance the tomato flavor beautifully.
Step 13
Grind 2 tablespoons of perilla seeds (deulkkae) into a fine powder. You can use a grinder or a mortar and pestle. Alternatively, you can use store-bought perilla seed powder.
Step 14
Add the ground perilla seed powder to the dressing. This ingredient adds a lovely nutty depth and a creamy texture.
Step 15
Gently toss everything together. Be careful not to overmix, as you don’t want to mash the tomatoes. Use a light hand to combine the ingredients and coat them evenly with the dressing.
Step 16
And there you have it! A delicious Tomato Marinade Salad. It’s wonderful on its own, but you can also toss it with cooked pasta for a delightful pasta salad. The burst of juicy tomato, the crisp vegetables, and the tangy-sweet dressing create a truly refreshing and satisfying dish. Enjoy this healthy and flavorful meal!
