How to Make Delicious Marinated Cherry Tomatoes! A Sophisticated Cherry Tomato Dish
Cherry tomato marinade is often served as an appetizer at high-end Omakase restaurants in Apgujeong! When I first tried it, it was a whole new world… I looked up how to make it and found out it was cherry tomato marinade. Today, I’ll show you how to make cherry tomato marinade!
Ingredients- 250g cherry tomatoes
- 40g onion
- 40g bell peppers (total, mixed colors)
- 1/2 Tbsp minced garlic
- 1 Tbsp sugar
- 1 tsp salt
- 3 Tbsp balsamic vinegar
- 1/2 Tbsp vinegar
- 1 Tbsp olive oil
- 1 Tbsp oligosaccharide (or corn syrup)
Cooking Instructions
Step 1
First, peel the onion and slice it into thin strips.
Step 2
Then, finely mince the julienned onion. This helps the marinade penetrate better and improves the texture.
Step 3
Next, remove the seeds from the bell peppers, wash them thoroughly, and julienne them just like the onion. Using a mix of colorful bell peppers will make the dish more visually appealing.
Step 4
After julienning, finely mince the bell peppers as well. Aim for a similar size to the minced onion.
Step 5
With that, we have prepared all the minced bell peppers and onions. These finely chopped vegetables will enhance the flavor of the marinade.

Transfer the minced bell peppers and onions into a sterilized glass jar or airtight container. They will form the base for the marinade to soak into.

Add 1/2 tablespoon of minced garlic to the jar.

Add 1 tablespoon of sugar for sweetness.

Add 1 teaspoon of fine salt for seasoning.

Pour in 1/2 tablespoon of regular vinegar for a tangy note. Using it with balsamic vinegar creates a richer flavor profile.

Drizzle in 1 tablespoon of olive oil to add richness. The olive oil will help to mellow out the flavors.

Here comes the star ingredient! Add 3 tablespoons of balsamic vinegar for a deep, complex flavor!

Finally, add 1 tablespoon of oligosaccharide (or corn syrup) for gloss and sweetness, then mix all the minced vegetables into the marinade ingredients. (If you’ve already added the minced vegetables in previous steps, you can skip this and just mix all the seasonings with the vegetables.)

Gently stir everything together so that all the ingredients are evenly combined. This step ensures the flavors meld together uniformly.
Step 15
Carefully place the washed cherry tomatoes on top of the prepared marinade. You can use them whole, or make a small cross-cut on each tomato to help the marinade penetrate better.
Step 16
Gently shake the container or use a spatula to carefully mix the cherry tomatoes with the delicious marinade until they are evenly coated. This completes your vibrant cherry tomato marinade! For the best taste, chill it in the refrigerator for a while before serving.
